Do sweet potato fries usually have a coating on them?

Hey guys,

A month or so ago we done a taster at the venue we are due to get married at later this year. Some parts were better than others to be honest. One item on our menu was sweet potato fries. When we done the taster, though not bad, the fries weren't crispy and tasted nothing like what we have at a restaurant. My girlfriend thought it was lacking some kind of coating as it seemed to like the slight "bubbling" affect we are used to. The lady serving said they were fried and not oven baked.

    Commercially made ones do have a batter on them, same as the homestyle chips

    Home made ones don't

    There's a burger place near me where they hand cut theirs and they serve them with a honey mustard dip

    A good sprinkle of paprika helps

    I always sprinkle mine with a pinch of semolina. That seems to help.

    I would say the ones in the original picture are fresh and those in the second are commercial frozen hence the difference.

    Most of the chain restaurants use McCains and they are definitely coated

    I coat mine in cornflour before frying and they're crispy just like the ones you get in restaurants.
