Spare veg - for bloke!

I've got quite a bit of veg left from my beef bourguignon:

Most of a head of celery
5 shallots
2 large onions
4 large chestnut mushrooms
a few new potatoes
half a cauliflower

Now I only bought this lot for the BB, but I don't want to waste it. I need some ideas...all I can think of is soup, but I've never heard of celery cauliflower mushroom potato soup. :o Would it all go together ok? :confused:

    I think it would make a great soup. Sweat the celery, onions and shallots with a bit of garlic, boil or steam your cauli florets for about 10 minutes and then add to the onion mix with herbs or a little mustard powder. In a separate pan make a cheese sauce (packet or homemade), then add it to the cauli and onion mix and blitz with a blender. Add milk and warm through until it's as thick as you'd like it. Cook the new potatoes in the oven and have as a side dish of mini jacket potatoes :)

    And the mushrooms? Can they go in too? I'm not allowed any waste or you lot'll shoot me! :p

    And I'm not sure about the cheese sauce...can I do it with vegetable stock? :confused:

    It would all make a great soup with a bit of veggie stock.

    Failing that - fry the shallots and an onion, add the celery and mushrooms - add a splash of wine or stock - thicken down with corn flour, serve with sauted new pots and steamed cauli.

  • If you have carrots/eggs/milk then you could make two dishes:

    Delia's "Braised Celery" with the celery/carrots/onion/seasoning (and some chicken stock - from a cube if you don't have some home-made). Freezes well and would go with your next chicken, etc.

    Fritatta - egg/cauli/pots/mushrooms/shallots/milk/seasoning (plus a little grated cheese sprinkled over the top for the last 10 minutes or so).

    I'd fry the mushrooms in some garlic and put them on the top.

    Cheese sauce

    2 tsp flour
    2tsp butter heated together to make a paste
    add milk (and a little stock) and stir well until it's a sauce.
    Add as much cheese as you like and stir in

    tbh, If you throw all the veg into the pan and fry it in butter and herbs, thn add stock and blitz it you'll be onto a winner :)

    Excellent - I'll have a go a soup sometime soon then. I was really pleased with how the mushroom soup turned out, so I'm looking forward to this. :D

    And so you should be. I used your mushroom soup recipe and it was very tasty, but of course I had to use shop bought mushrooms, cos I wouldn't know an edible one from instant death:D

    Right, I've also got about a pint of beef bourguignon sauce left, with a couple of small bits of veg, probably. Can I add that to my forthcoming soup? :confused:
