Home made food that copies the bought stuff

Please post any recipee you have used which may copy something that is found in restaurants or shops that you like that works....

Just to get started.....
REECES peanut butter cups
Before Reeces peanut butter cups landed on UK shores the Americans had been eating them for years. Here's a home made recipe that I got about 20 yrs ago from a Menonite cook....

Base: 2 1/2 cups of digestive biscuit crumbs
2 1/2 cups icing sugar
1 cup peanut butter smooth
1 cup butter/marg

Melt butter and peanut butter in a pan, when liquid add the biscuit and icing sugar mix well.
press into 9 x 13 inch swiss role tin.

Top: Melt 12 oz chocolate (dark or milk, cheap or expensive, up to you)
with 1/4 cup peanut butter.

Spread on top of base. Cool in fridge...

    ALICE SPRINGS CHICKEN

    This comes from the American steakhouse called 'OUTBACK' and is worth a go.

    4 chicken breasts
    8 slices of streaky bacon
    250g mushrooms sliced
    1/2 cup of honey
    1/2 cup of Dijon mustard
    Small wedge of edam or other cheese which melts like Monterey jack
    Some cheddar

    Mix together the honey and mustard with a tsp of lemon juice and 2 tsp of oil.
    Pour half of this mixture over the 4 chicken breasts and marinate them in the fridge for 2-3 hours.
    Fry the bacon till well done, drain and leave on kitchen paper.
    Sear the chicken breast in a hot pan, (I put it on the BBQ and do it that way), cook the chicken breast basting it with some of the honey mustard dressing.
    While you are doing this saute the sliced mushrooms
    When the chicken is cooked, place in individual dishes ( I use the white ones from ASDA that are about 6 inches by 4 inches, 99p each)
    Put the bacon slices over the top of the chicken breast, then the fried mushrooms, salt, pepper and the rest of the unused dressing . Top off with your cheeses and put under the grill or hot oven to melt the cheeses until hot and bubbly.
    Garnish with parsley

    Just one thing to clarify with the chicken, do you take it out of the pan after searing and cook in an oven, or do you just lower the heat and carry on in the Pan, or is it immaterial?

    Peanut butter cups

    Thanks to Nigella and they are lovely, very popular with the lads at work!

    Ingredients
    For the base
    50g/2oz soft dark brown sugar
    200g/7oz icing sugar
    50g/2oz butter, softened
    200g/7oz smooth peanut butter (not wholenut)
    For the topping
    200g/7oz milk chocolate
    100g/3½oz dark chocolate
    gold buttons and edible gold stars to decorate, or other decorations of your choice

    Take the seared breats out of the pan and put them into individual dishes and then put the other ingredients on top. When it's all complete put in the oven to melt the cheese (or under a low grill)

  • theres a website that has lots of restaurant recipes - they used to have a KFC recipe - my OH made it a few times and it was fantastic!

  • cool, I was just looking for the KFC recipe too! I have read that when chemically analysed there arent '11 secret herbs and spices' at all!!

    The recipe below appears to be the same as the recipe my OH used - I notice that both of them rely on the salt, pepper and MSG for the KFC flavour!
    (p.s probably not the healthiest way to eat chicken, but at least you can use decent quality chicken at home instead of the rubbish KFC use - pretty cheap too if you use thighs, drumsticks etc)

    Extra Tasty Crispy Chicken

    1 whole frying chicken, cut up
    6-8 cups vegetable oil

    Marinade
    4 cups water
    1 tablespoon salt
    1/2 teaspoon MSG (see Tidbits)

    Coating
    1 egg, beaten
    1 cup milk
    2 cups all-purpose flour
    2 1/2 teaspoons salt
    3/4 teaspoon pepper
    3/4 teaspoon MSG

    Fried chicken is a common meal in the Southern US States. Most southern fried chicken recipess are great and use just salt, pepper, garlic powder in the coating flour for the seasoning.

    i have a pdf file that has a whole load of recipes to make things like:
    mars bars
    cadburys cream eggs
    KFC BBQ baked beans
    McDonald's stuff
    Burger King
    Ben and Jerrys

    and loads more. I wasn't sure if i was allowed to post it or not.
    If i am and people are interested I dont mind putting up a link for it but am seeking permission first - if needs be I can email it to a mod?

    The only one I can think of at the moment is home-made Bacardi Breezers, if you add Bacardi to Traditional style lemonade (cloudy), it is a dead ringer for lemone Bacardi Breezers.
