Chicken cottage pie?

Options
Can anyone help me with making this please? I saw it mentioned in the chicken fillet thread, have looked on here, asked and have looked on the net. I guess it's probably the same as cottage pie, but I have never even made that. If anyone could help me please I would be grateful as I would like to make it tonight for tea instead of the usual rubbish I eat! Thanks, Amy xxx

    Hi ames,

I've never made it but it does sound like a good way to use up leftover chicken.

I had a quick look on google and found these two recipes:

    Chicken Cottage Pie

Turkey Cottage Pie (you could substitute the turkey for chicken)

To make ordinary cottage pie, I dry fry some mince and onions. Add some chopped carrots, leeks and whatever other veg I have handy. Then add some worcester sauce, black pepper and a stock cube. Thicken the mixture with a little cornflour mixed in cold water and put into a casserole dish. Top with creamy mashed potatoes (some grated cheese added to them is nice) and pop in the oven until the potatoes are golden.

I have to make this for my eldest daughter because she can't stand mince. I cook a piece of chicken, usually boneless breast (I buy it when its on offer and freeze). Then I cut it into chunks and put it in the bottom of an individual cottage pie dish. Then gravy goes over this. (My other daughter insists I do the gravy like grandma if I make it for her! This means I have to put cream in the gravy to make it a paler colour and it goes really well with the chicken.)

Then mashed potato goes on top followed by grated cheese which is then grilled until its golden.

Thanks for the help guys! Pink - do I need to use cornflour, as don't think I have any?

Beth - might try that but will put some veg in too.

Instead of gravy this would work really well with pureed sweetcorn for the sauce.;)
I always add tinned tomatoes to my normal beefy cottage pie, am I alone in doing this? I thought it was normal?!

Sometimes I use tinned tomatoes - every now and again I switch this for a tin of baked beans. Makes it thicker and just different to be honest :)

I meant to have said, my daughter won't eat veg which is why my version doesn't have any in it! If it was me eating it I would probably put carrots and cauliflower in it and have a side dish of green beans too! Yum!

She doesn't know it but I mash some cauliflower into the mashed potato. With all that gravy, meat and cheese, she doesn't taste it!

Pureed sweetcorn? Never heard of that before! Thanks for the suggestion, but think i'll stick to the gravy - I can make that lol.

How much gravy do I use. Is everything supposed to swim in it or just a bit?

Really? I use it all the time in place of white sauce, much less faffy to make & it's gets a portion of veg into any fussy kids! Just a drained tin of sweetcorn in the blender with a little stock/water as needed. If using frozen sweetcorn cook in the microwave for about 2-4 minutes to soften first. Can be treated as white sauce & you can add cheese/white wine/peppercorns etc.

    HTH;)

I'm not a really a good cook, so haven't even used white sauce unless you count the chicken white wine sauce I had out of a tin once, but it didn't taste very nice!
