Ginger Bear Muffins!

It's nearly time for the annual Children in Need appeal, so if you want to make some nice 'gingerbread' muffins for the event, here's how.
Makes about 10 muffins.
10 oz Plain Flour
2 teaspoons Baking Powder
half teaspoon Bicarb of Soda
2 teaspoons ground Ginger
1 teaspoon ground Cinnamon
half teaspoon ground Nutmeg
Sift all of the above together in a large bowl.
Then, in a smaller bowl:
5 oz Soft Brown Sugar
1 beaten egg
180 mls Milk
90 mls Vegetable Oil
4 tablespoons Black Treacle
Stir the above together carefully, then tip the bowl of wet ingredients into the larger bowl of dry ingredients and combine thoroughly.
Pour into muffin trays lined with cases - Lakeland sell the Pudsey ones.
Bake in the middle of the oven at Gas Mark 5 for 25 minutes.
You can then either eat these yourself, throw a Pudsey party, or sell them at school or work and donate the profits to the appeal. They get softer and nicely sticky if you store them in an airtight container for a day or two. Enjoy!
