Might be really odd question, but is it possible to make, cook and then freeze a Victoria Sponge??!!! lol

Yes you can freeze it. personally I freeze it in two halves then sandwich together with jam after I defrost it.

Defrost at room temp.
Storage time is 3mths
Tip: Did you know you can freeze the uncooked Vic. sponge mixture too?
Then, just defrost for about 3hrs, turn into the prepared tins and bake.~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Is that storgae time of 3mths once its been unfrozen? just only reason I wanted to freeze one was because didnt think it would keep very long0

no i think the 3 months is in freezer... make sure the cake is completely cool before u freeze else when u defrost it wont be as nice0

Food cooked from scratch will not keep long; the reason storebought Vic sponges have a longer shelf life is due to the preservatives in them. We home bakers have to rely on freezing to extend 'our' shelf lives
Once defrosted, it reverts back to normal 'fresh' status when it comes to how long it will 'last' - which for a Victoria Sponge is only a day or two. HTH~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

I often freeze cakes/sponges - make a few at a time and freeze what arent needed in the next day or two. Then just get the others out as and when needed and they taste fine - ideal for days when baking is too much of an effort!Weight Loss - 102lb0

Okay I made four because I was bored. I have sandwiched two together, but would like to freeze the other two. Just wrap in cling film and bung in freezer? And then just leave out for a while to thaw when I actually want to be greedy and eat it?:pPink Sproglettes born 2008 and 2010
