We're off camping with 3 kids next week, first time ever, and I@m desperate for ideas for veggie cooking for 2 awkward littel boys! Can anyone help? I'm not desperate to keep it cheap, but the cheaper the better (is that not the idea of camping??!)

When we go camping, my veggie 14yr old daughter seems to survive on those pasta'n'sauce things
IMO, they're not too bad - but I prefer it served with a couple of bangers off the barbie0 -

The OH and I went camping this year, we're both veggies. We cook on a trangia stove, the main thing I would suggest would be to take some seasonings (eg curry powder/ chilli powder) to make things more interesting. We would cook up some soup, vegetable curries, 3 bean chilli. The express rice that cooks in 3 mins is ok too (not that cheap though, we always buy when the offers are on to stock up for the next time).
Also, check whether your campsite has a fridge/freezer or ice pack exchange, you may be able to take some pre prepared food from home.Saving for an early retirement!0 -
Because of limited cooking equipment we used to live on a lot of tinned food (chunky chicken in white sauce is one which comes to mind, but that's not a lot of use for a veggie!) I think there are bean-based canned meals that can be heated up fairly easily.
Also, what about risotto made with those packets of savoury rice (Aldi & Lidl both do good ones)
Do you eat eggs & cheese? Omelettes are fairly simple to do with limited equipment, as are scrambled eggs. They can be served with salad, veges etc, or the savoury rice or pasta. We used to use instant mash, because of cooking times - didn't want the gas to run out too soon!0 -
Hi nickihutch - I'm veggie and I go camping a lot. Unfortunately I'm not an awkward boy, but I'll tell you what I normally have! I cook with a single burner camping stove :
1. Cous cous - you just need to add boiling water - with stir-fried veggies (boil the water first then cook the veggies quickly as the cous cous is absorbing ... i like my veggies fairly crunchy!).
2. When feeling lazy, I have tinned pasta meals or those packet pasta meals (like someone mentioned before).
3. If you have a fridge in your caravan/motorhome, you could always make hearty soup and just warm it up on the camping stove.
4. otherwise, I just make plain old sandwiches!

baked beans with grated cheese with bread&butter, and get some tins of new potatoes, slice them up, fry them in a pan and add eggs, cheese, onions etc. to make a spanish omelette or frittata. Take some packets of noodles - just add boiling water - while you're cooking stirfry veg or heating up tinned veg curry on the stove. As Imelda says, taking seasonings with you is probably the best way of ensuring tasty food - especially veg stock cubesor Marigold veg bouillon powder, pepper, and ketchup. In my experience kids will eat most things if they can put ketchup on it.Before you criticise a man, walk a mile in his shoes.
