I want to cook a nice meal for someone with Crohns

Hi,
It's my mams birthday coming up & I'd like to cook her a lovely meal. The problem is she's having a bad flare up of her crohns at the moment & has to limit her diet.
She can only have 2 small portions of fruit or veg every day which cannot include onions, tomatoes or anything with edible skins or pips.
She also has to omit fat from her diet so chips etc are out.
She's not a lover of fish (unless from the chippy!) & red meat has to be minced (although any white meat/poultry is fine).
To top it all off we don't have an oven! We have a hob & a microwave/grill thing.
So heres the million dollar question! Does anybody have any meal ideas taking into account the above? I'm really at a loss at the moment.

Is she allowed cheese?
You could do chicken stuffed with ricotta/mozarella and spinach served with potatoes.
i like to do loin pork steaks searved with steamed sliced potatoes and leeks which i put in the oven with a white wine cheese sauce over the top. - Can be served with any veg tbh - broccoli etcIt's nice to be nutty but's more important to be nice0 -
Hi, I have the disease, so I'll let you know what I eat
Limit foods that have a high fibre content ie, wholegrain cereals, wholemeal bread/ biscuits, nuts, seeds, dried fruits, and skin/stalks of fruits and vegetables. Milk cream, cheese in moderation
You could do a grilled chicken breast with rice or white pasta or mashed pots or baked potatoe. Mashed carrots and gravy, yorkshire puds!
jelly and ice-cream (for a laugh) or a slice of cake
I doubt she will eat a lot, people with crohns tend to be slim and eat less as food is associated with pain. I would also ask her what sort of food she would like you to do, I'm sure she'd be glad of that

My sister has crohns and finds that when she's having a flare the strangest things can set her off.
best thing would to keep it as simple as can be.
how about a very simple noodle dish?
Noodles with chicken fried in a little soy sauce with a few chinese veggie thrown in (mange tout etc)
Basically something that wouldn't take a lot of digesting.
Watch out for Dairy... some crohns sufferers have to limit their intake.Most things in life are beyond our control,for everything else there is a spreadsheetson#1 born 04/01/09

She's having a particularly bad flare up at the moment & recently was in hospital for 4 weeks. heres also talk of surgery atm. Part of the reason I want to cook for her is because she is eating very little at the moment & also feeling quite down on herself because she's fancying everything that she can't have & has no inspiration.
Would like to put some meat on her bones!!!
As for cheese she's eating it at the moment so don't think that its affecting her.0
