    Roasted veggies are delicous mixed in a pasta bake. I use those tomato sauces from stores. Lovely.

    Salads! Yummy, all sorts of variations.

    I am a variant on Veggie, I'm non strict so I do eat lots of cheese and eggs, also don't freak out about animal by products, just avoid meat. I started re-eating some fish a couple of years ago in discussion with a healthy friend, who said I was lacking protein, so eat Tuna and Salmon quite regularly.. How strict are you aiming to be? What do you want to avoid altogether?

    Oh raffe, good for you. It's so easy cooking veggie, pasta dishes, rice dishes etc. I tend to just throw it all in and it generally comes out good. I love veggie chilli made with loads of veg and also veg shepherds pie with alsorts of veg chopped up into small pieces (I don't do quorn) and seasoned etc
    I haven't got one!

    Do you like things such as lentils and chickpeas? Some of the meals I ake are:-

    Spaghetti bolognaise with lentils
    Shepherds pie with lentils and veg or veg alone
    Pasties with a chickpea, onion and potato filling
    Lentil curry
    Chickpea curry
    Vegetable curry
    Vegetable lasagne
    Spinach and mushroom lasagne
    Goats cheese and red onion tartlets
    Roasted vegetable tart
    Mushroom and onion suet pudding
    Lentil patties
    Chickpea burgers (can also have aduki bean burgers etc etc)
    Spicy beanburgers
    Vegetable chilli
    Pizza
    Quiche
    Roasted vegetables in batter (sort of toad in the hole) This can also be made with veggie sausages
    Cauliflower souffle
    Cheese souffle

    Hope this gives you some ideas
