Left over potatoes

Someone on another thread mentioned leftover mash and it reminded me of this:
Cheese whirls
1) Mix, potato, cheese and most of egg. You can add chopped onion, parsley or mint if you want. You should have a spreadable mixture.
2) Roll out pastry into an oblong.
3) Spread mixture on, right up to the short edges but leave the long edges empty for an inch. Brush these edges with some of the leftover beaten egg.
4) Roll up from the long edge so you have something that looks like a swiss roll.
5) Cut into 1" slices, and lay flat on a lined baking tray. Glaze with any egg left.
6) Bake @ 200 degrees C until cooked (20 mins or so).
These can be made in advance or frozen, they served them at my kids' primary school and always a favourite.
Cheese whirls
- You need some flaky/puff/rough puff pastry. I always keep a pack in the freezer.
- Cooked potatoes, mashed up, seasoned. Quantities can be varied for this recipe - at least a cereal bowl full.
- Grated cheese - the more, the better.
- 1 egg beaten
