aubergine pancakes and.....?

i've been trying to find new ways to cook audergine since i get one every week in my veg box and it's been getting boring. found a great website with lots of recipes, including aubergine pancakes.
i'm sitting eating them at the moment - they taste pretty good but to convince OH it'll need something with it to make it a meal. neither of us are veggies so he'd probably prefer some meat with it, but i have absolutely no idea what to have with them/on them.......
any suggestions gratefully received!

If you like curry you could try making Aubergine and Potato (Aloo Baingan) with your next aubergine

I use 1 aubergine for my family of 4 and eat with pittas/naan or chapattis. Can have with rice too if you like. Have also just shoved some between 2 slices of bread for a quick snack! But then I do that with any curry!:D0 -
I know you're not veggie (neither am I for that matter) but I had a fantastic Australian Woman's Weekly recipe for spinach pancakes which you could adapt for aubergine ones - toast 2 tblsps pinenuts in a frying pan, allow to cool and then mix in 250g ricotta cheese (philadelphia will do at a pinch) and 2 tblsps grated parmesan. Season to taste. Put this mixture into the (warm) pancakes, fold in four and top with HM tomato sauce (fry half an onion, one crushed clove of garlic, a grated carrot until soft but not brown; turn up the heat, add one can of chopped tomatoes (value ones are fine), a sprinkling of mixed herbs, pepper and salt and a dessertspoon of sugar; bring to the boil and simmer until everything is soft, then whizz through a blender or food processor). This is yummy, and would go very well with the aubergines, I would have thought.0
