Hiya
Has anyone got any yummy recipes for empire biscuits ?
There is a fantastic shop in town that sells them, they are a whopping £1.35 but gorgeous.
I have checked through my recipe books and dont have a recipe for them. However the recipes posted on here are always yummy, so was hoping someone could help.

I had to google them as I had no idea what they were :rotfl: & found this so thought I may as well post it for you. They look tasty though and easy to make I'll have a go myself I think

thriftlady, you would recognise them if you saw one. They are two biscuits sandwiched together with jam and topped with icing and a glace cherry on the top.

I was just ondering if anyone had made them themseleves and had success with them.The shop were I get them from are really delicious and Im wondering if there is a luxurious way of making them.

just take two thin shorbread type biscuits and sandwich them together with jam then ice the top and add a sweetie decoration0

hi cat ,these seem to be a scottish biscuit ,i will have a hunt about later and see if i have a recipe some where for them .i used to make them years ago but have forgotten how.
found it
empire biscuits
1/2 lb plain flour
1/2 lb butter
1/4 lb castor sugar
1 egg
jam
icing sugar
cream the butter and sugar together,add the egg and the flour
mix into a stiff paste
roll out and cut into rounds cook in a moderate oven ( roughly gas 4 180 c) till golden
when cooled sandwich together with jam and put on icing
then sit back and eat them all lol0 -

I make these a lot! my recipe is
3 oz of sugar, 6 oz marg/butter, 9 oz plain flour. mix together - you have to keep going and it will bind together eventually. Roll our thinly, cut into rounds and bake.
When cool sandwich together with thin/sieved jam, and top with icing sugar/water mix and sprinkles!

They're also called german biscuits in my area.
My cousin, who's in the catering trade, gave me the recipe he uses in his schools. It makes a HUGE quantity cos it's for commercial baking, my quantities are on the right, and in bold. They still make a very generous amount of biscuits.
Empire Biscuit Mix/Basic Biscuit Mix
1.5kg Plain Flour 500g
1kg Marg 333g or thereabouts
500g Caster Sugar 166g
Put the flour and sugar in a bowl, rub in the marg.
Knead together lightly to make a dough.
Roll out, cut and bake at around 180 for 12-15 mins, or until cooked. You don't really want any/much colour on these.
Once cooled, sandwich them with seedless jam, top with sugar icing and whatever you have on hand - sprinkles, jelly diamonds, etc.
Can see me making these tomorrow
