Healthy meals for one?

Hi I would just like to find out what kind of healthy cost effective meals you can make for one.
I live with my bf but he is a very fussy eater, his diet consists of freezer food or pasta in creamy sauces and i tend to just eat the same as him.
Our daily diet tends to be:-
Breakfast - cereal
Lunch - Sandwich
Dinner - as above
We aren't overweight but i have noticed that my skin is quite dry and i suffer from breakouts more than i used to.
When we do our shopping i do buy fruit, veg and fish etc but find that it goes out of date so quick that i have to throw some of it away which i hate doing, hence why i give up and just eat the same as my bf.
Any suggestions would be great

Hi what about doing a stir fry.spray a large frying pan with fry light, chop up some chicken and quickly fry this for a few minutes until cooked,put on one side.Spray pan again and cook chopped up veg (onions,peppers,tomatoes and mushrooms, cook for a few minutes then put chicken back in pan and stir all together, if you like garlic put a couple of tablespoons of garlic sauce in .0
