freeze it? I made a massive batch and have not used it all. Was wondering if i could freeze it to use next year?

I think that you can freeze it FunkyFairy, but I'm not sure that you can keep it for a year though. I seem to remember reading that you can only keep it for 6 months, but I may be wrong, and will not be offended if someone corrects me. I was reading up on what to do with leftover mincemeat, and came across that info a homemade mincemeat recipe I think. I made some nice mincemeat flapjack bites with mine, and there are lots of recipes for things to use it up eg. bread and butter pudding.Enjoy the little things, for one day you may look back and realize they were the big things.I married Moon 8/4/2011, baby boy born 26/9/2012, Angel Baby Poppy born 8/11/15, Rainbow baby boy born 11/2/20170

Yes, I'm sure you can, that is to say- I would. However it is designed to keep for months (as long as it is proper mincemeat with sugar and alcohol in it). I've kept it for a year, it dries out a bit but you can revive it with more booze. Just keep the jar somewhere cool. I would only do this with unopened jars btw.
I have half a jar in the fridge. I shall use it up over the next couple of months in crumbles, pies, on ice cream, stuffed into baked apples, wrapped in pancakes, in muffins.....0 -

Ooh yes Sexymouse bread and butter pud with mincemeat is gorgeous -good one:T That's also reminded me of bread pudding which would be great with mincemeat too.0

i used last years this december......it was lovely!!
just kept in the jar, i hadnt even thought about freezing it- prior planning prevents poor performance!

I used last years this year and, like Thriftlady just chucked in more brandy and some grated orange. Mine wasn't frozen but kept in a sealed jar in a dark cupboard.0

yep top it up with brandy it makes a a lovely boozy mincemeat bit like a rumptof. Keep mine in a jar in my shed.0

This is the link to the mincemeat flapjack things. It's the last recipe on the page - think they call them fruit slices though. If you look up recipes if you want to broaden your search, another name for it is fruit mince.

I've just finished off last years supply!
Delia's recipe, topped off with a little extra brandy and stored in a dark cupboard, it was gorgeous :drool:0
