Fryer and Oil question

Can I ask you all how long would you use the oil in a deep fat fryer .Is there a specified number of times you can fry with a quantity of oil.Does anyone know exactly how many.
The reason for asking is that I was told that superheated oil can release cancer causing breakdown products.Any truth in this??

Interesting , I usually just keep the oil in the cupboard , didn't realise it was best in a fridge :-/ but do now

I also used to strain the oil through the strainer thing that came with the fryer but it didn't seem to do much so will try kitchen towel next

if you wash a pair of tights or if you have an odd pop sock just pour the oil through that and that does the job

That sounds like a better idea , cause i can see the kitchen towel soaking a lot of oil up :-/ thanks

what a good idea. why do i never think of things like that.

if you wash a pair of tights or if you have an odd pop sock just pour the oil through that and that does the job
