Store cupboard Challenge

Went to a very, very good jazz gig last night - unfortunately with all the dancing and such, spent too much money :beer: . Definately dont want to spend any more on food this week and am looking too recoup a bit of my budget from next week to cover the oopsie! :rolleyes: (it was worth it though!!). unfortuately cant get myself inspired about my store cupboard items so thought I would revive this challenge! NB. for anyone who hasnt seen this post before, the idea is you try and make stuff from all the random items in your cupboard.
- in my cupboard I have
2 potatoes
spinach (which definately needs to be cooked today)
a jar of mayonnaise
veg stock cubes
1 onion
2 parsnips
eggs
milk
1/2 bag of lentils
2 kilos of choc chips (see post below!)
all the usual staples flour etc
- I will cut and paste recipes of course! - or you could paste is straight onto the recipe thread and then post the link!
Any ideas greatly appreciated!!!!

I've made my debts bite-size too depressing to look at all at once so am handling them one at a time - first up Graduate Loan £1720 paid off! only £280 to go!!!

ooo.. I dont know, well I need lunch for two days (have some leek/potato soup in freezer to top up others), I need dinner on Friday eve (will get fed at work the other two eves) and then if I can stretch it out into as many meals as possible for next week I can save some pennies for the bruised pin money fund (pin money fund is a stash of cash that I've saved up from when I didnt spend all my budget - then when I get a bit carried away and do go over budget I can take a bit out to close the gap!)

Pasties
Made using flour, marg and water
Dice/slice potatoes/parsnips/onion/lentils/spinach (quantities required depend on how many you want to make)
Cook the vegetables with with veg stock cube until tender.
Roll out and cut pastie sizes, add cooked ingredients and cook in oven.
Jacket potato with egg mayonaise - egg, onion and mayo and cook the potatoes if they are suitable
or Egg mayo sandwiches if you have bread.
Cook lentils, (not sure which ones these are)
When cook add lentils into a pan with onion, and stock cube and gently simmer for 5 mins (you can add spinach into this dish as well.)
Eat with rice
Spinach - can be lightly steamed and frozen so it will keep for later in the week if you don't want to eat it today!
Sorry not to sure what the staples are....could maybe make things from them as well!!...what is in your freezer....
How many eggs?? you can do curried eggs - or make a curry with the veg and include eggs....0 -
you can make chips with the potatoes?
or mash?

Salad with raw spinach, small cubes of boiled potato and boiled egg, lentils (if they are the kind that hold their shape. not red lentils). Mayonnaise or salad dressing made from staples (vinegar, oil etc) to dress.0

You lot have just given me an idea for something else I can half make and freeze for later. A pie type pastie. Diced meat, gravy, veg...but instead of in a pie, within a pastry shell. My OH doesn't like pasties...I wonder if he'll notice?
