Savoury Crumble (to help friend convert to MSE!)

I'm slowly converting my friend - tonight for tea she's got homemade soup, homemade bread and homemade apple crumble. Worked out about £2.50 for dinner/pud to feed 6. She's well chuffed... but still won't come on here! Says she's too shy and wouldn't know what to say!

Now, her hubby did a garlic and herb loaf and decided the recipe was wrong so added extra stuff. Needless to say it didn't work! My friend has cut some up and is using it as croutons with her soup but fancies trying out a savoury crumble, probably using lamb, with the rest of the bread.

Does anybody have any recipes I can pass on? Just one more 'hit' for MSE!

BTW - her soup has 'hidden' veg in it! She's used leek, onion, parnsip and swede (which some of her family won't eat) with homemade chicken stock then blended it. Then she's put in diced carrot and potato which she knows her family will eat :D And it's lovely!

Here's a recipe I use from the long out of print "Dairy Book of Home Cookery" It's great served with a great pile of steamed brocolli and carrots. If you like saucy dinners you may also want to serve gravy on the side.

    CHESHIRE LAMB CRUMBLE

    1lb mince lamb
    1 onion (chopped)
    3oz flour
    1tbsp tomato puree
    1/2pt beef/lamb or veg stock
    2oz butter
2oz grated Cheshire cheese (other hard cheeses are also good)
    1oz oats
    1/2tsp mised herbs
    salt & pepper

Dry fry meat and onion in a non-stick pan for 10 mins.

Mix in 1/2oz flour, tomato puree, stock and seasoning.

    Turn into shallow ovenproof dish.

In a bowl, rub butter into remaining flour, then stir in cheese, oats, herbs and seasoning.

Spoon over the meat and bake at 190c (Gas 5) for 45min - 1hr

Awww, bless her! Tell her she doesn't have to *say* anything!!! Not everyone is a gasbag like ..... ME :D:D:D
Tell her to sneak in when we're not looking and read and learn, then she can take notes and sneak out the back door and we'll never even know.
Oh and if you can ask her to wear a safety pin on her lapel so that we know who she is so we can pretend that we don't .. even better!!!

I make a humble savoury crumble with just basically plain flour, half or a fraction less of that quantity in marg/lard, a pinch of salt. I have been known to jazz it up a bit with a sprinkle of dried chillies, or using a pinch of onion salt instead of plain salt. Easy peasy topping!

But you were asking about using the garlic and herb LOAF soooo .... if she uses the lamb as the base, use the loaf over the top in breadcrumb form as the topping, just as you would in an Au Gratin recipe: turn it to breadcrumbs and sprinkle over the top of the lamb base.

MATH - yours sounds rather scrummy too!!! *licking lips*

Thanks peeps. Can always rely on someone!

MATH that sounds yummy and might try it myself! Will get friend to try your recipe but using the breadcrumbs as a topping. And with none of those nasty veggies in the actual recipe all her family will eat it. Success is just around the corner!

Now to get her to register... :D
