Recipe for Brocolli & Apple Soup?

Someone brought some in to work a while ago and it was delish! Haven't seen her for a while and hope to make some this next week.
Does anyone have a recipe for this?

Broccoli and Apple Soup
INGREDIENTS:Broccoli - 1 large head about 300g (11 oz), Dessert apples - 2 peeled, cored and chopped, Butter - 50 g (2 oz), Red onion - 1 chopped, Vegetable stock - 750 ml (1 pint), Pepper to taste, Double cream - 90 ml (3 fl oz).
COOKING: 1. Discard the tough stem from the broccoli and coarsely chop.
2. Melt butter, add the onion and apples. Cover and cook for 10 minutes. Add the stock and broccoli. Bring to a boil, cover and simmer for 15 minutes.
3. Purée the soup, return to the saucepan and heat slowly. Add pepper and cream.
4. Serve with croutons.

broccoli soup is yummy with some crumbly cheese stirred in at the end

Just had this for lunch and I have to say it's absolutely delicious!!!
Little'un saw me chopping up apples and brocolli and said "Urghhhh I'm not eating that!!!" :rolleyes:
I just told him that I'd never had it before either so might not even like it myself so he agreed to give it a try ... he scoffed the lot and came back for seconds
I think next time I might omit the cream though, or maybe add a small swirl to the serving dish, as I'm not a huge lover of dairy products and i actually preferred the taste before adding it. Was still lovely though!"An Ye Harm None, Do What Ye Will"

Made this this afternoon, and had it for tea. Delicious, we had lumps of cheddar in ours and nice crusty white bread. So easy to make and easy to remember how to make. We didnt have cream in ours either.“A budget is telling your money where to go instead of wondering where it went.” - Dave Ramsey0
