Inexperienced baker needs help with cupcakes

Hello
It is my friends birthday and I can't really afford to buy her anything at the moment, so decided to make her some cupcakes as she does have a real sweet tooth and I already have in most of the ingrediants.
I was going to use a victoria sponge recipie and then decorate with icing, but thought to make it more interesting I should also make some chocolate ones. I do have a bar of milk cooking chocolate - do I just melt this and put it in with the victoria sponge mix??
I'm not very experienced at baking, but do like it so would appreciate all your help and advice.

I tend to use cocoa powder in my sponge mix rather than melted choccy. Not sure if the mix would still rise with the melted choccy in it to be honest. I make a mean batch of banana choccy muffins and i just chop up the chocolate and throw it in the mix for them.MF aim 10th December 2020 :j:eek:MFW 2012 no86 OP 0/2000

yeah i was gonna say that as well, I'd chop up the choc and put it in as chips, that should work quite well. good luck with them.Weight loss 2015: -4lbs January (thanks flu):wall:

Don't think I have ever posted it PumpkinPatch. Here it is
3oz butter
1 egg
5 oz caster sugar
7oz self raising flour
3 ripe bananas
2 oz choclate, I use buttons and break them up.
In a glass bowl melt butter, I micro for 40 seconds.
Add egg and sugar to melted butter and mix
add ripe bananas and mash together until you have a lumpy puree
add in the choccy I use milke choccy but any does,
Fold in the flour and divid between 12 muffin cases
bake at 180 for 20-25 mins until risen and golden.
I sometimes find if the bananas haven't been really ripe then the mix is a little dry. if this is the case add a little milk until mix is a thick dropping consistancyMF aim 10th December 2020 :j:eek:MFW 2012 no86 OP 0/2000
