I've noticed lots of people asking about snacks lately, so thought i'd do a thread with my home made ones i do. Obviously added to this list has to be twinks hobnobs(delicious!!!!!!! Thanks twinks)
Anyways, these are our junk snacks!!!! May not be super healthy, may not be ultra cheap HOWEVER they are homemade, and I know exactly what goes into them. no additives no preservitives and the bonus is i can get the kids to help!
15's
15 digestives
15 marshmallows
15 glace cherries
tin of condensed milk
dessicated coconut
Chop marshmallows and cherries, smush up digestives, and mix together. Add condensed milk till of a consistancy you can roll into sausage shape. Roll in dess.coconut and chill. Chop into bite size chunks.
Ginger bread
7oz plain flour
1 teaspoon ground ginger
3oz soft brown sugar
1 egg
1/2 teaspoonbicarb of soda
2oz butter
2 table spoons golden syrup
sift flour, bicarb and ginger together
rub in butter untill mixture resembles breadcrumbs. stir in sugar
mix in syrup and egg. Knead to form smooth dough
roll out 1/2cm thick and cut out circles/people
bake on greased tray for 12mins @ 190'c
Tiffen
4oz butter
2oz dried fruit
2oz desicated coconut
2tablesp golden syrup
2tablesp drinking chocolate
1/2lb digestives
4oz cooking chocolate/milk chocolate
crush biscuits.
put all ingredients(except chocolate and digestives) into pan. gently bring to boil
add biscuit crumbs
line 7" square tin with foil. pour mixture in, press down well. Chill
when mix is cold, melt choc, pout over top
chill
tip out cut into squares
Toffee krispies
1oz butter
1tablesp single cream
2oz creamy toffees
2oz marshmallows
2oz rice krispies
Place all ingreadients except the rice krispies into saucepan untill metled.
remove from heat and stir in rice krispies
place mixture into a greased square tin or cupcake case's
leave to set
New zealand hockey pokey biscuits
4oz butter
1 cup sugar(4oz)
1 tablesp golden syrup
1tablesp milk
1.1/2 cups flour
1teasp baking soda
melt butter, sugar, syrup and milk together
cool till lukewarm and sift in flour and baking soda
roll into balls and flattern with a fork onto an ungreased tray
bake for 15-20 mins at 180'c
Malt loaf
8oz self raising flour(half wholemeal half white)
3oz brown sugar
4oz sultanas
2desertspoons treacle
8fl.oz milk
mix all ingreadients together. place in greased and floured loaf tin
Bake for 1/1 half hours at 180'c
serve with butter
Easiest banana bread
(great for using up gungy bananas)
4oz butter
1cup(sml childs mug) sugar
2 eggs
3 tbsp milk
2 cups self raisinf flour
1tsp bicarb
2/3 gungy bananas
1tsp vanilla essence
bung all ingredients into mixer. whiz together. pour into greased cake/bread tin and bake for aprox 1hour @ 160'c.
Orange butter cookies
100g sugar
100g butter
2 egg yolks
1tbs orange juice
grated rind half orange
150g plain flour
1tsp baking powder
1/4 tsp salt
cream the butter. beat in sugar. egg yolks, orange juice and grated rind. add flour salk and baking pwder. mix well. chill in fridge for 3/4 hours
Roll into small balls
place on greased baking tray flatten slightly and cook @ 180'c for 8/10 mins. brush with melted butter while cookies are still warm....mmmmmmmm delicious served warm!
Caramel shortbread(millionaires shortbread)
shortbread-
6oz butter
3oz caster sugar
6oz plain flour
2oz rice flour/cornflour
caramel filling-
one 396g can condensed milk
4oz caster sugar
8oz butter
3tbsp golden syrup
topping- 8oz plain or milk chocolate
place butter and sugar in bowl and beat until light and fluffy
add the flours and mix to form a soft dough. knead slightly
press dough into greased tin, smoothing it over to cover base
!!!!! with a fork and cook for 25 mins untill golden
allow to cool
place carmel filling ingredients in a saucepan and heat until sugar has disolved
bring to the boil for 7/10mins, stirring all the time until its toffee coloured and thickened(dont worry about the fark brown 'burnt' looking bits in the caramel, they all disappear when it colls!!!)
Pour over the shortbread base and leave to set
melt chocolate and pour over caramel. cut intoo squares!
Mars bar biscuits
6 mars bars
6oz butter
6oz rice crispies
cooking chocolate
chop up mars bars, place in pan
melt mars bar and butter, beat together until smooth, remove from heat
add rice crispies and cover with mixture
press into square tin
cover with melted chocolate. when cool cut into squares to serve

Thanks very much for posting these recipes, they sound delicious! I am fed up with shop-bought goodies so will definitely be trying these out, especially love the sound of the 15's, yummy!

All these recipes are exactly what I've in mind yesterday when I'm thinking healthier snacks to make for the week, but I'm also thinking about savoury snacks instead of the usual packet of crisps etc. Any suggestions on savoury snacks I can make in advance so DH can help himself during lunch time or hungry times?!

for savoury snacks, I find cheese straws are always a good idea
similarly, marmite spread on leftover pastry and rolled up then cut into whirls are nice bitesize snacks..we call them marmite things!
pizza wheels - make a big pizza, roll up and cut into wheels, leave to rie again then bake as normal

Chicken and apple bites
one apple, peeled, corred and grated
2 skinless boneless chicken breast's cut into chunks
half red onion
1tbsp chopped parsley
50g wholemeal breadcrumbs
1tbsp concentrated chicken stock
wholemeal flour
groundnut oil for shallowfrying
spread the apple out on a clean teatowel and press out all the excess moisture
put the chicken apple, onion, parsley, breadcrumbs and stock in a food processor and pulse breifly until well mixed
spread flour out on plate, divide the mixture in to 20 small balls and roll into the flour
heat oil and cook for 5-8mins untill golden brown.
serve hot or cold(not sure how long these will keep in fridge)
Cheese twists
butter for greasing
85g of gruyere cheese, grated
half tsp paprika
ready rolled puff pastry(or homemade but im hopeless at puff pastry!!!)
1 egg, beaten
mis together gruyere cheese and paprika and sprinkle over the sheet of puff pastry. fold the pastry in half and roll out a little to seal the edges.
Cut pastry into long 1cm/half inch wide strips then cut each strip in half and gently twist. Place on greased baking tray. Brush with beaten egg and bake for 10/12 mins untill crisp and golden.
Sticky drumsticks
chicken drumsticks
2 tbsp maple syrup
2tbsp soy sauce
1tsp sesame oil
Remove any excess skin. Mix maple syrup, soy sauce and sesame oil in a large bowl. Add the drumsticks and toss well to coat. Place in the oven and cook for 30/40mins untill juice runs clear and coating is nice and sticky!
Money bags
100ml cooking oil
100g feta cheese chopped into small dice
100g cherry toms chopped into quarters
basil/parsley or chive roughly chopped
pepper
plain flour for dusting
250g filo pastry
put feta, toms and herbs into bowl, season with pepper and stir
flour surface and unroll filo onto it. peel off two sheets and roll the rest up for later, keeping it moist under damp teatowel. Place one sheet ontop of the other and cut into 6 squares each measuring about 5inch
Brush the squares with a little oil, then stack three squares ontop of one another to make a 12 point star.
place a heaped teaspoon of the cheese mixture into the middle of the star and pinch them together to make a bag
Bake for 5/10 mins @ 190'c
Hope these help some! I've got a few more, Courgette and cheese muffins and sunshine cornbread, savory scones etc but im spent now!

Courgette and cheese muffins
175g courgettes grated
200g cheddar cheese grated
250g self raising flour
1teasp bicarb
1/2 teasp salt
200ml milk
1 egg
4 tblsp olive oil
place courgettes and cheese in mixin bowl. Sift in flour, salt and bicarb mix together
put milk egg and olive oil in a jug and mix together with a fork. Pour mixture into other ingredients and stir until combined. Use a desertspoon to spoon the mixture into muffin cases so that each is nearly full.
put muffins in pre heated oven @ 190'c and bake for 25 mins or until risen, golden and firm to the touch. Leave to cool for ten mins. Eat hot or cold
Sunshine cornbread
butter for greasing
200g cornmeal
225g plain flour
1tbsp baking powder
1tsp bicarb
1tsp salt
425ml plain yogurt
100ml milk
50ml maple syrup/or 50g brown sugar
50g butter
sift cornmeal, flour, baking powder, salt and bicarb into large mixing bowl and stir together
place yoghurt, milk, maple syrup, eggs and melted butter into another mixing bowl and beat with a fork
pour dry ingreadients into the wet and stir them all together just enough to make a batter. Over stiring can make cornbread tough
tip mixture into greased baking tin and bake at 180'c for 20/25 mins
Allow to cool. Serve warm or cold with butter, soup, stews or cheese and pickles!
Man on the moon scones
225g self raising flour
50g cold butter cut into small cubes
pinch of salt
75g cheddar(or your fav cheese) grated
100ml milk
1 egg/or 1yolk beaten/or milk to glaze
sift flour and salt into large mixin bowl. Add the butter and rub into the flour untill it looks like breadcrumbs
stir in 50g of the cheese, add milk and mix. Using your hands bring the mixture together to make a ball of soft dough.
Sprinkle some flour onto surface and tip the dough into the middle. Gently roll out the dough untill its about 1inch thick.
Using a cutter, cut shapes and place on a greased baking tray. Brush with choosen glaze and sprinkle with the rest of the cheese.
Bake for 12/15 mins @ 200'c
(To get really light crumbly scones dont handle the mixture anymore than you have to)

what size can of condensed milk do you use..I fancy making these today:D
