Weight Watchers 'Recipe Only' Thread

To run alongside the 'DFW Weight Watchers Challenge', I thought I would start this thread for Weight Watchers recipes as making a recipe from scratch is SO MUCH CHEAPER than buying WW ready meals...

  • Nil Points Carrot and Ginger Soup

    1kg Carrots, peeled and chunked up
    Inch of Ginger Root
    Enough Stock to cover carrots (can use veg or chicken Oxo cube)
    Couple of grinds of Pepper

    Put the carrot in a saucepan or microwave dish. Cook until carrot is soft. Blitz in the liquidiser. Season to taste. Enjoy GUILT FREE :rotfl:

    1 point super cheating stew...

    2 tins of WW tomato soup
    2 tins of water
    2 carrots
    1 medium potato
    1/2 sweede
    1 beef stock cube

    Chuck in a pot and leave to boil for 1/2 hour then to simmer to taste / prefered thickness.

    Makes 3 decent sized portions working out at 1 point per portion!!

    Also freezes well :)

    1 aubergine, 1 courgette, 1 onion, 1 clove garlic
    low fat cooking spray, 225g red, green or yellow peppers
    6 medium eggs, 4 tble spoons skimmed milk, 2 tea spoons oregano, 1/4 tea spoon salt & pepper.

    Preheat the grill. Arrange the slices of aubergine and courgette on the grill rack. Coat lightly with low fat cooking spray. Grill each side for about 3 minutes. Alternatively cook them in a char-grill pan.

    Meanwhile, spray a non-stick frying pan with low fat cooking spray and add the onion and garlic. Cook for 3-4 minutes, stirring often. Remove from the heat.

    Spray a 23cm (9 inch) round baking dish with low fat cooking spray. Add a layer of half the aubergines, half the peppers, then all the courgette, sprinkling each layer with some of the onion and garlic mixture. Repeat with remaining peppers and aubergine.

    Beat the eggs, milk and herbs together. Season with salt and pepper. Pour over the vegetables. Bake in the oven for 25 minutes, until set and golden brown. Serve warm or cold, sliced into wedges.
