Vegetarian Yorkies?

Hello all

I dont generally post in here but I do pop my nose in now and then for some inspiration and recipies (got myself a breadmaker and a slow cooker thanks to OS :D) so firstly thanks for all the effort people :beer:.

Now the main reason for my thread is that im struggling in getting my yorkies to rise.

Cos Im veggie I cant use lard and have to use veggie oils but they just dont get hot enough and my yorkies just dont rise very well. When I do use lard (for OH) they rise like baloons so its definately the oil.

Anyone elso come accross this problem? Any of you OS'ers have any solutions?

    I only use olive oil for cooking and have no problems with yorkshires. If you can get them to rise with lard, obviously the batter is fine. The essential thing is heat - hot oil and a hot oven.

    Hi gremlin,

    I agree with Magentasue. I only ever use oil to make Yorkshire puddings and they rise well, but it has to be really really hot. Normally I preheat the oil in the oven and then carefully put the tin on the hob (to keep the temperature high) while I pour in the batter.

    Agreed, I use sunflower or veg oil for mine ( we are not allowed lard in the house duie to OHs cholestrol)

    I leave it in the oven till its piping hot, and smoking. If I rflick a droplet of water in- it has to spit furiously, otherwise its not ready & the batter wont go in till it does sizzle.

    I've always made mine with vegatable oil and they rise (most of the time!)

    I preheat tins and oil in the oven then place tin on gas hob as I pour in the batter, turn up heat to full for about 10 seconds to get it all bubbling around edge then quickly into oven.
    I think veg oil seems to cool down faster than lard so it does need to be put on hob.

    I have recently started to use a deep 12 hole muffin pan to make yorkies in and they have been ginormous. Half fill with batter made with 1 egg to each 2oz plain flour. Heat oil as described above and watch them go.
    Mortgage and Debt free but need to increase savings pot. :think:

    I use frylight and get huge yorkshires in a 12 hole bun tin. We found in the past that leaving the mixture to 'settle' for an hour before cooking it leads to bigger puds. That and a really hot tin. Oh and I don't wash the tin, just give it a wipe around with some kitchen roll

    Thanks for the replies I knew I could rely on oldstyleee wisdom :D

    Ok it looks like I might be letting the fat cool down too much before I add the mixture. I had assumed that because veg fat doesnt reach the heat of animal fats that it was the problem but it looks like veg fat doesnt hold the heat as much as animal fats so Im gonna try putting it on to a hot hob while im adding the mix. Good tip that one.

  • No-one ever believes me when I tell them this but I NEVER pre-heat oil for yorkshire puddings - using a tip in a recipe book I got over 25 years ago I just grease a cold 12 cake fairy cake tin with marg and pour in the batter - made as follows:
    4oz plain flour (this is very important - SR flour and they won't rise)
    2 eggs
    half pint milk
    pinch salt

    I put the tin into a pre-heated oven (220) and cook them for about 15 - 20 minutes and they rise really well and never stick, and they are much less greasy than ones cooked in hot oil or lard.

    my mum and gran's tips which never fail are 3fold:

    make the mixture before and let it sit for a while
    get the fat really reaally hot (always use veg oil)
    add a splash of very cold water to the mixture and mix/beat quickly just before you pour the mixture into the tins - the contrast with the hot oil makes them even better!
