My husband and i love Greek food, especially Stifado and Kelftiko, but the recepies i have tried online have been far too rich. I wondered if there are any Greek people, or otherwise, here that might be willing to share, or give me some tips?)

I'm not in the slightest bit Greek, but I use this recipe for rabbit or beef stifado. It isn't in the least rich, just flavoursome and healthy

Mmm, my best friend is Greek but I can almost guarantee that she wouldn't be able to give you tips on how to make food less rich. I went on self-catering holiday with her once, and was quite happy to eat her food but amazed to see how much cheese, cream, and olive oil went into it!
Every time I've called her to check on Greek recipes, she always says not to cut anything out. She's tiny and I don't know how she does it!0 -

I suspect that many greek dishes that are popular in the UK are festive ones usually kept for religious holidays and so by nature rich. It's like Lasagne - my mother only ever made this for special occasions as made properly it took hours but boy, is it worth it. This is similar to her recipe http://italianfood.about.com/od/bakedpasta/r/blr0086.htm. Simpler versions pale in comparison. Even now, I only ever make it at weekends as even a cheats version - with ready made pasta - takes time and I cant make it for less than £6 for 4 as I refuse to compromise on the ingredients. Pus, making it too often takes away its charm. Midweek I make a simple pasta bake instead.NSD 0/150 -
I have a recipe book called The best traditional recipes of greek cooking bought while on holiday in Greece. Some of the recipes are lovely, I haven't tried the beef stifado one myself so can't vouch for it.
Beef Stifado serves 6
1.5 kilos beef
1 kilo small onions
1 teacup olive oil
1 teacup vinegar
2-3 ripe tomatoes finely diced
rosemary
bay leaf
2 cloves garlic
salt
peppercorns
heat the olive oil over medium heat and brown the meat. add onions and saute for 5 minutes. add remaining ingredients with water (doesn't specify how much!) boil for about 2 hrs until its left in its own sauce.0 -

There's a recipe in this book for vegetarian stuffed vine leaves if thats any good to you. There is also a recipe for stuffed cabbage leaves containing mince which could probably be interchanged with vine leaves. I don't have the time to post them at the moment but, if either interest you let me know and I'll post them when i have a little more time.0
