  • Warm some olive oil, add in some chopped dried chillies, and garlic if you have it get it hot, the when a squid ring curls on impact with it.Get the squid in.Must be hot oil. stir fry for about a minute, til it whitens, then stir the lot through Linguine, or spaghetti
Most people overlook opportunity as it comes dressed in overalls, and looks like hard work.
  • If they are complete squid, use the back of a knife to pull the heads off and have a faff around inside the tube to find the "bit of plastic" thingie and pull it out. Then cut the tentacles off and chuck the head and the two really floppy longer thinner tentacles. You can either cut the tube into rings or simply dice it up, the tentacles if large can be cut down to size too. I prefer them pan fried in garlicky oil with a few breadcrumbs in for good measure. They should ideally be cooked hot and quick, as soon as they turn "proper" white they are all but cooked - over do it and you might as well eat your own car tyres.

  • Can you freeze it?

  • Yup - You can freeze it after it is cooked. Just let it cool, chill it in the fridge and then freeze it for later
