Summery Soups

I love having soup at work for lunch and have eaten a mountain of minestrone, a vat of pea and ham and enough spicy chick pea and chorizo to drown an army this winter, however its no getting warmer and brighter and I need summery soup inspiration - I still would like hot soup but am getting stuck for ideas - I have a quick frozen pea and pesto one but thats about all and obviously fresh tomato once we are in the high summer glut but any ideas would be appreciated.

check out any of the diet websites: Rosemary Conley, Slimmers World, Weightwatchers. Most of their soup recipes are what I'd think of as 'summer soups.' They do a fab carrot and coriander (easiest recipe I've ever seen) on the WW site, if you want you can add semi-skimmed milk to make it a cream of c & c.0 -
I like the thai type broths in the summer.Basic chicken stock then add a dash of soy sauce,fish sauce, sliced chilli,sliced ginger,squeeze of lime juice and a pinch of sugar,thats your base then add strips of veg like peppers,carrots,mushrooms and any meat.Its hot but really light and refreshing."Sometimes life sucks....but the alternative is unacceptable."0

mmm like that idea - do you think I could take cooked noddles and raw veg in a box and poor over hot stock at ork - worried the veg might got soggy in a flask all day?People seem not to see that their opinion of the world is also a confession of character.

Thats a brilliant idea re the noodles and hot stock rachbc, I often make that kind of soup at home but hadnt doen it a work for the reasons you identified. It's a real Doh! tip but I needed it. thanksEat food, not edible food-like items. Mostly plants.0
