Cheese Souffle , any recipes please?

I`ve not had a cheese souffle for years so fancy making one but have`nt got a tried and trusted recipe.Does anyone ? thanks;)

    I always used the recipe in Delia's cookery course and it never failed. Don't have it to hand but if you do, I'd recommend it.

    I have some blue stilton (wedge of) and brie (semi circle) left over from a selection pack. Also a small amount of mature cheddar (couple of crackers worth). I'm wanting to make some sort of flan/souffle dish with these and some other bits I've got in like couple of slices bread, 3 pittas, onions. Trying not to have to go out and buy many if any more ingrediants to make it into something. Also got 3 eggs, milk. tinned tomatoes, tinned ratatouille, pasta, herbs.

    I don't like stilton on its own but had it in a flan recently and it was yummy. Have also got 3 unopened cheddar cheese sticks from dd's packed lunch last week that weren't used up and an unopened bag of mozarella that I was saving to do HM pizzas with.

    I like using up stilton in sauces. Current fave is to do savoury panckes stuffed with chicken and veggies and then bake them with the stilton sauce poured over.

    I looked up a few threads for you. I once had a 3 cheese souffle and it gave me a headache it was far far too rich:o

    This thread on cheese souffle suggests using Delias recipe but i can only seem to find her stilton souffle omelette

    I second the freezing idea, i would chop into portions and wrap individually so that you can just take out what you need at the right time.
