As a very wise person once said ‘chocolate is cheaper than therapy, and you don’t need an appointment!’ There’s no denying chocolate’s appeal. Not only is it delicious, it’s actually good for us, too, as it’s packed full of antioxidants, as well as mood-lifting alkaloids.



One of our favourite artisanal chocolatiers is Bill McCarrick of the Sir Hans Sloane Chocolate House, who lovingly hand-crafts limited edition chocolates and pralines in his chocolate studio in Surrey. His dark chocolate is so good it won the gold award for Best Organic Dark Chocolate at the 2007 World Chocolate Awards.



Unlike other chocolatiers, Bill conches (melts and kneads) the chocolate himself for 72 hours rather than buying it ready-processed. This vital process affects the taste and texture of the final chocolate enormously. ‘I’d used a large conching machine in the past’ explains Bill, ‘and knew the benefits – both to aroma and texture.’ When the world’s first small-scale artisanal concher came on the market, Bill was the first UK chocolatier to install the machine in his chocolate studio.



Sir Hans Sloane recently launched their new Artists collection chocolates, featuring flavours inspired by Europe’s greatest artists, including the Tahitian vanilla-seeded Gauguin, the coffee-infused Caravaggio and the almond-enriched Goya. The chocolates are available from Selfridges (0800 123 400) and sirhanssloane.com from £8 for a box of four to £36 for a box of 25.
