dried shiitake mushrooms ideas

have a pack of dried shiitake mushrooms that need using by next month have you great people any ideas. thanks

    Could make a creamy mushroom pasta sauce, mushroom risotto or mushroom soup. Or if you're not trying to make a meal out of them they are really scrummy as a sort of crunchy breadcrumb topping for pasta....just whizz up a handful of dried mushrooms and a couple of crusts in a food processor then season and fry in a couple of "glugs" of olive oil. Keep moving so they don't burn before they crisp, then tip onto a sheet of kitchen roll to soak up excess oiliness. Scatter over pasta sauce to create a nice texture. Can't take the credit as it's based on a Jamie Oliver recipe I had for tea!

    Wild Mushroom risotto. I did that recipe the other night, using dried porcini and oyster mushrooms and a pack of normal mushrooms, and it was lovely. definetly doing it again.

    you can soak them and use the juices & mushrooms in after frying a steak, add buter & cream, I love porcini for this! its so rich!
