Salmon pasta sauce?

Can anyone help me please? I want a creamy type sauce for some salmon and tagliatelle. I have some frozen sliced mushrooms, Quark, onion, garlic and some more basics.

Any ideas? I'm not good without a receipe!:o

Thanks Catt x

There was one in take a break a while back that was watercress blended with quark, some milk, garlic, horseradish sauce and pepper - just whizz it all up and pour it over the hot pasta. It was very good, although don't do what I did and put too much watercress in it, it was a bit overpowering. This was made with smoked salmon, but I'm sure it'd be really nice with some flaked salmon fillet in it too.

Creamy mushroom and garlic sauce made with the Quark? I'm sure that'd be nice with salmon (although I'll eat salmon with anything lol).

So do I just fry the mushrooms in garlic then stir in the Quark? That sounds good.

Quark is simular to fromage frais. Have a look for a recipe using that and use the quark instead.
Stir in at the end would work as you just want the creamy taste.

I only ever use it for cheese cakes. :o

I often make a sauce using smoked salmon trimmings. I saute 1/2 a finely chopped onion, crushed garlic clove and a few thinly sliced mushrooms in a little oil and butter until soft. Then I add the smoked salmon, a small tub of single cream, and check the seasoning. Toss in the pasta and add a sprinkle of chopped parsley. mmmmmmmm :)
You can probably substitute the quark for the cream quite easily.

Oooh this is making me hungry! Well I've put the salmon in the oven to cook, so I can cool it and flake it before making the sauce. Yummy! Thanks for all your suggestions! I must get braver at just chucking it in!

Just my luck. A damsel in distress and I turn up too late.

Anyway, for future reference, here's my Carbonara Sauce. I can't see any reason why it shouldn't have worked with the salmon instead of the ham and the quark instead of the cream.

    CARBONARA SAUCE

    Enough for pasta for 2

    INGREDIENTS

    2 cloves of garlic
    1 onion
    100g of mushrooms
    4 slices of cooked ham
    1 tablespoon of olive oil
    1 tablespoon of flour
    150ml carton of single cream
    1 teaspoon of mixed herbs
    Ground pepper to taste

    METHOD

Peel the garlic and chop it into tiny pieces. Peel the onion and chop it into tiny pieces. Wipe the mushrooms clean. Cut the ends off the stalks and chop them into slices. Cut the ham into 1cm (½ inch) pieces.

Put the oil into a frying pan on a medium heat. Add the onion and garlic. Cook for a couple of minutes until the onion has gone soft. Stir frequently to stop it sticking. Add the mushrooms, stir and cook for a couple more minutes. Add the ham. Add the flour and stir until it has absorbed the oil and juices in the pan. Add the cream and the herbs. Season with the pepper. Stir and cook for about a minute until it has made a smooth sauce.

    ADDITIONS & ALTERNATIVES

Use bacon instead of the ham. Chop the bacon into 1cm (½ inch) pieces and fry it with the onions and garlic. Serve with either tagliatelle or spaghetti.

Thanks Stephen I have copied and saved that. The trouble is I'm trying to adapt receipes to Slimming World, so I try not to have meat and pasta together and can't really use oil, flour or cream.

But I do love my pasta so I'll keep that one for a treat/entertaining!
