Spicy Salmon & Coriander mash

I'm not absolutely certain how moneysaving it is as salmon is not the cheapest thing but it is certainly easy to make and has the bulk deal of providing another meal for another day if you do the fishcakes as well so I thought I'd mention it anyway. I got the idea out of a Sainsburys magazine once and I'm hooked on it.
The original says buy 8 Salmon Fillets, 1.5kg of potatos, handful of coriander and have butter, cajun spice and oil at hand. These amounts serve 4 that evening and then you have the same amount of leftovers to make fishcakes with for another night. However often the supermarkets don't have enough salmon in one go and I have no room in the freezer so I often make less and modify appropriately.
For the full amount boil the potatoes for 15mins (I usually leave the skins on because I like them that way and I'm lazy) while waiting for them mix 3 tbsp oil with 2 tbsp of cajun spice and spread it on your salmon both sides. Fry your salmon for 4 mins each side during which time put a bit of veg on if you want veg with your meal. Mash your potato and add your chopped coriander and a big knob of butter.
To make the fishcakes flake your remaining salmon fillets and mash together with the remaining mash and shape into patties and chill or freeze appropriately.

This sounds yummy! I think I'll have a go at it...I'm a tad fussy over salmon though, absolutely will not eat the farmed variety. Fish farms are evil (IMHO anyway) so will splash out and try it with some wild salmon if I can get it. Being a sad singleton if I use the ingredients as listed....that's eight meals! It might be more sensible if I just make less though.
