We had to have a "quickie" ...

... 5 minute "meal" tonight. I'm not up to cooking a meal (my ear has flared up and I can't get appointment tonight :( ) so I wanted something fuss free and super speedy.

I rummaged in the freezer *before* turning to the phone - *potential takeaway alert!*

I found a packet of potato cakes dh had bought reduced at some point ( 25p); in the fridge I had the remnants of rubber pork (dh forgot to take to work!) and in the "pantry" I uncovered a tin of Lidl baked beans.

Sliced the pork (= 4 clumps) grilled the p.cakes (4 mins) and reheated those beans (2 mins). Total time: < 5 mins!!

Felt dreadfully guilty serving it up (but at least their lunchboxes were healthier ;) ) .....

....

"Wow, Mum! This is D-LISH!!" Bless their hearts, they meant it!!!! :o

This now raised a little question in my head ...

what is the speediest, cheapest, dinner-like meal you could whip up in just 5 minutes (or less!)?

    Don't worry Queenie, we're having the rest of the sausage and bean casserole re-heated tonight, with some left-over mash and crusty bread ;)

    I just did beans on toast for the kiddies and they were so happy! We haven't had a quickie for ages I've been so busy trying to cook a full meal from scratch or using leftovers I forgot. I did offer them a poached egg aswell but no takers luckily for me.

    In my meal planning during the week I always plan in a quickie.

    Any from scrambled egg, beans on toast etc.

    Tonight is the night as hubby buys his lunch from work tomorrow. I know shock horror.

    what a great thread! Maybe we could have a quick recipe thread in the old style recipe index, eg recipes that definitely take less than 20 mins to prepare as sometimes I really don't feel like cooking for very long either and often need to be inspired in the kitchen! Anybody ever heard of frozen pea soup recipe for example ?

    I do not cook on Fridays and we eat whatever curry is on bogof that week at Tesco. So don't feel guilty Queenie. From someone who suffered a major ear infection abroad two years ago and am still suffering with the after effects you have my sympathy and I don't blame you for not cooking.

    I 'invented ' this when I was catering and about 10 extra people turned up.

    To a tub of low fat fromage frais add lemon curd to your taste - start with a dessertspoon. Stir it in with a fork until well mixed and chill in the fridge, Add a slice of lemon to serve. It's a good dinner party pud for slimmers too and best of all, looks as if you have slaved over it.
