Attempting to de-egg a quiche recipe:o, to make it acceptable to those who don't like using non-free range eggs.
Lots of the recipes I've seen on initial googling are offering me substitutes which are loads more expensive than the eggs.:eek:
Has anyone had any success with replacing egg with anything which doesn't cost more than the eggs themselves? In this recipe the eggs are 18p and the quiche feeds 4.

Sorry but no - it's one of the few things I haven't managed to make egg and dairy free at a reasonable cost. You can use tofu, which is quite expensive, and to be honest isn't the same thing at all. I'd be interested to see what responses you get.

This isn't the question, but I use soya milk with eggs quite happily in my quiche, it doesn't miss the dairy in that respect.
I can't think how you could replicate the effect of the egg....will think about itPiglet

The only possibles on google seemed to be cornflour and/or chickpea flour, but I think it's going to have to be super cheesy to disguise the flavour of those...

May not be what you want, but the Alsation Onion Tart can be made without eggs. Does have a spoonful of creme fraiche, but that I think could be replaced with a paste made with dried milk and water. (Have been reading and fascinated by your other thread!)

Have you thought of doing a flan instead of a quiche? Using white/cheese sauce - a fairly thick one, mix in your fillings & fill the blind-baked pastry case. Pop in the oven, and it should go all wobbly like quiche, so you can slice it.
Best where the fillings are quite chunky & bulky - as the sauce itself can be a bit bland (eg salmon & broccoli, ham & mushroom - rather than trying to recreate quiche lorraine...)0 -
Hi Pitlanepig yes use soy milk too - we are a household who are dairy/egg free - but have never managed to find a good replacement for eggs in "eggy" dishes - my daughter makes a lovely mexican scrambled "egg" with tofu which is quite tasty but not really eggy or inexpensive! When I used to make quiche-type things in a catering-for-20 setting I used to make stuffed tomatoes as an egg free alternative - using stuffing and a soy cheese on top in half a beefsteak tomato - tasty and cheap!

I found a recipe in a really old cookbook for dairy/egg free - from before tofu and soy milk were widely available - and it is a smoked haddock flan made as thursdaynext suggests. It has 1 lb smoked haddock, 8 oz button mushrooms and a white sauce made with flour/milk/lemon juice and chives. The sauce is made, the poached haddock and cooked mushrooms added and mixed and baked in the pastry case. Garnish with parsley

Hi Weezl - that looks lovely! We are dairy free also but think i'll have a go with a mushroom and white wine sauce and smoked haddock.
