Storecupboard "Hot Bounty Pudding"

I just had to share this adventure in cooking i made with the remnants of my storecupboard last night.
Hot bounty pudding.
bag of flaked rice ( 2 portions for me & OH, so 1/5th baG)
milk ( about a mugful)
half a tin of evaporated milk that needed finishing off out of the fridge
half a packet of creamed coconut ( the hard block one) used about half of this
chopped up the creamed coconut as much as I coudl and added them to a mugful of milk and a splash of hot water, stirred to melt
Place this and the rice in pan adn make it up as you would normally
stir in the evap milk keep stirring so it doesnt stick & burn
then after about 20 mins its done
I then served up and cover with chocolate ice cream ( caburys dairy milk 2 for a quid from farmfoods
)
( i thought about it after and thought it would probably work better if it was baked, but with melted plain chocolate over the top)
Anyway, hope someone enjoys this- I certanly did!
