Pork Leg Joint - help!

Hi,

I am cooking for some friends tonight and have got a Pork Leg Joint from the local butcher, it has just dawned on me that I have not cooked a pork joint before, so am looking for some tips!

Any help appreciated!

    I go by deliah smith cooking times for roasting all types of meat she cooks meat times are calculated by the pound.. will have a look for pork and post it here

    whack the oven up high gas mark 8
    rub the joint with veg oil and a little salt to get crackling
    do at the high temp for half an hour (half hour sizzle)
    then turn oven down to gas 5 and do for 35 mins per pound
    take out for half hour before serving to ease carving
    if you need to crisp the crackling up cut it off and put it back in the tin in the oven and whack the heat up again
    make your own apple sauce and that will impress too

    if you have hugh fearnley whittingstalls meat book that is good;)

    put slivers of garlic in the pork...20 mins in the oven at 245c then lower it to 190c and continue roasting for 35 mins per lb.... its fool proof and it will turn out perfect! good luck!

    Stick it in the slow cooker with a chicken/pork cube and 1/2 a cup of water for 4/5 hrs. Trim off the fat and serve. Easy peezy!
