I use canola oil for cooking, only because Costco sell huge jugs of it. But although it's expensive i like groundnut oil becuase it has a really light taste so is perfect for salad dressings and the like. I rarely fry eggs with oil but if I do groundnut is perfect because it doesn't add taste to the egg.

Of course don't use if there is a hint of nut allergy in the family

I use Extra Virgin Olive Oil for some dishes ie Italian, as the flavour enhances it plus it's good for you, but for any shallow frying or where the flavour needs to be more neutral I use sunflower oil or groundnut oil.

I have an embarrassing stash of oils - ordinary olive for frying onions for sauces etc, extra virgin for salads, groundnut for mayos and stir frying, sesame for chinese, sunflower for general frying, pumkin seed cos its delish. But you could probbale get away with 2 oils - a flavourless one for shallow and deep frying and olive oil where you wan a nice taste.

  • Oil is a bit 'horses for courses' - I have sunflower/vegetable oil as a basic neutral, extra virgin for anything meditarrean/european and sesame oil for oriental (though it smokes very easily in the wok so really should be used just for flavouring or in marinades).

The Wikipedia article on oil is quite useful: http://en.wikipedia.org/wiki/Cooking_oil

I usually use sunflower oil for cooking, unless I'm making Italian/Med food, then it's plain olive. I never buy vegetable oil as it is usually Rape Seed (also known as Canola). As someone who lives in a rape seed area, it is absolutely horrible. It is a known allergen to humans, and is a disaster for the environment.

    Ok. Soap box over now.

Canola and rapeseed are not the same - they share the same origins, but are very different chemically.

Just about anything can be an allergen to humans, and canola is no worse than any other product in that way. As for its environmental impact, it has very low toxicity and biodegrades quickly.

Certainly there was some negative information circulating about canola oil a few years ago, but there doesn't seem to be any evidence to substantiate the claims that were made. Snopes has more on this.

Anyone who suffers from hayfever and other allergies knows full well the misery of living in a rapeseed oil area. I never had hayfever when living in non-arable area, but after moving to a rapeseed area I suffer terribly. Rapeseed can and does cause misery.

Rapeseed pollen allergy is relatively unusual - grasses and trees are by far the most common pollen allergens (along with ragweed in North America). Also rapeseed pollen is large and carried by insects, rather than the wind. It has been suggested that the medical problems people describe are caused not by the rapeseed pollen, but by organic compounds that the plant gives off - but that doesn't explain why these problems are not reported by those in rapeseed-growing areas in other parts of the world.

There's more on allergy and rapeseed at http://www.independent.co.uk/environment/nature/the-rape-of-spring-health-concerns-over-crop-448454.html

I'm not disputing that you have a rapeseed pollen allergy - it's possible you do, and I certainly sympathise with your suffering, regardless of whether it's due to rapeseed or something else. But rapeseed is not the same as canola, and claims of its toxicity, carcinogenicity, deleterious effects on the environment etc - they just are not supported by any evidence whatsoever.
