NEEDED - ery simple cookie recipe for teacher presents!

My eldest son has learning difficulties and attends a special school. At the end of each school year I usually buy the teacher and the assistants (6 altogether) a small pressie. I was thinking that as my son likes baking he could make some cookies and we could package them nicely. It would be more personal that way (and cheaper!!).

I am fine at making cakes, but not very good at biscuits/cookies - they always come out like hard cardboard circles :o Does anyone have a foolproof recipe?

And (sorry, asking lots of questions!) where is the best place to buy some cellophane bags to package them up?

I'm also going to get him to make the thank you card we normally give, too - have no idea how yet (I want it to be him that's made it, not me)

    Hi TDD, this is a fab cookie recipe - I got it from the MSE site somewhere on the OS board so can't take any credit for how lush these turn out! They are similar/very like Millies Cookies and very easy to make...
    3oz butter; 3oz granulated sugar; 3oz brown sugar; tsp vanilla extract; 1 egg; 6oz self raising flour; pinch salt; 4oz of choc chips or raisins or dried apricots or whatever you want to add.
    Method: preheat oven to 180 degrees; mix all ingredients together; put spoonfuls onto trays covered with greaseproof paper; cook for 11 minutes.
    So far I've made chocolate chip ones and raisin ones and the raisin ones are our fave.

    I found this link for biscuit bags but they are sold by the 100 - I assume you don't need that many :rotfl: but if it is a success, maybe you and your son could bake everyone's Xmas presents this year?

    As for cards how about a photo of your son stuck onto a card front with a picture or something inside? I've cheated for my son's end of year thank you cards as he's really not into craft stuff so I ordered photos from Snapfish with a frame border that says thank you - 10p each photo.

  • That's fantastic, thanks rainmac, they sound lush (we like Millie's cookies) - we will obviously have to 'practise' the recipe a couple of times before we do it for real!!

    I was having a look for bags online (I do think 100 might be a bit too many!!) and I found this company http://www.cakescookiesandcraftsshop.co.uk/acatalog/Cellophane-Bags.html that sell them in 10s or in 100s.

    Can't wait to start baking now!

    Simple shortbread cookies

    150g Flour
    50g castor sugar
    100g butter

    Mix all together, make into a big ball. (You can add what you like to the mix, eg: choc chips, chopped nuts, smarties, raisins, cocoa powder, coconut)

    Roll in to little balls (about the size of a ping pong ball) and squash them down.

    bake for about 15 - 20 mins, and cool on a rack.

    My kids love making these, and they are so simple.

    Choc chip cookies ( or anything else you want to put in ! )

    heat oven to 190

    8oz soft baking marg
    6 oz soft brown suger ( or whatever you have )

    cream together
    add
    10oz sr flour
    6oz porridge oats
    4 tablespoons of golden syrup

    then add 200g of choc chips ( or 200g of anything you fancy ,)


    form into balls and squash slighly , place on lined baking sheets and bake for 8 mins only , these need to be just a light golden brown , they look very soft when you take them out , but any longer and they go very hard

    I made this recipe today - and they are delicious, and really easy (even though I have no mixer - note to self - BUY ONE!!) and had to beat everything together by hand.

    Do you have a cake craft shop near you? My local one sells those bags for 10p each.
