Persuasive vegetarian indian food

I know there's a lot of info out there on indian food and have just spent an hour trying to trawl it but failing to find what I'm looking for.
DH is very wary about eating indian food but I know if I can find the right recipes he will love it. I want to persuade him that indian food is healthy and tasty. On the plus side we are both veggie and indian food is very veggie friendly, and are both big fans of pulses and lentils. But on the minus side, DH will not eat anything with elements of sweetness (raisins etc are definitely out) or anything creamy. He also refuses to eat rice which is a major stumbling block. There will never be any movement on any of this :rolleyes: I have tried!
I am really sorry for posting when I know the info will be out there somewhere, I've just been bewildered by the amount of it...does anyone have a link to a few recipes that might work? Suggestions for healthy alternatives to rice would also be very helpful - healthiness will be my biggest selling point in all of this.

Have you thought about using bread instead of rice, like naan, roti, chapatti?
We are vegetarian also and hence we cook a huge amount of indian inspired foods.
Below is my recipe for green pepper and potato curry - it's quite jalfrezi-like - and it was one of the first recipes I ever successfully mastered so is very close to my heart!!
you will need:
black mustard seeds
cumin seeds
250g potato, peeled and cut into smallish chunks
1 green pepper, peeled and cut into similar size bits as the spud
1 can tomatoes (plum or chopped, doesn't really matter)
garam massala
ground corriander
tumeric
hot chilli powder
salt to taste
chopped corriander
green chilli, chopped.
Heat a tablespoon of oil in a pan. When hot, add 1/2 tsp mustard seeds. When they start to pop, add 1/2 tsp cumin seeds and fry until they brown (will take only a few seconds)
Add potato chunks to pan, fry until brown or for around 5 mins in a hot pan.
Once potatoes are done, add green pepper, 1 tsp garam massala, 1tsp ground corriander, 1/4 tsp tumeric, 1/4 tsp chilli powder. Stir well and add the canned tomatoes.
Bring to a simmer, place lid on pan and cook until potatoes are done - around 10-15 mins.
Just before you serve, add some chopped corriander and chopped chilli, and salt if you need it.
I have tried making naan breads etc and although it's not difficult it is quite time consuming.0 -

Maybe serve with pittas as an alternaive to rice.
You can microwave them for about 20 seconds each, cut them in half (top to bottom) and then fill the pocket up with whatever you have made.
Also, if he's funny about eating Indian food, cook it, serve it, and tell him it's a recipe from some other region0 -

Serve it with chutneys, pickles (if you like that sort of thing) and pittas, served as I mentioned in my previous post.

Can I ask how many that recipe will serve ? Trying to add some vegetarian meals to my diet.
Also can I make a suggestion. You should add a pinch of garam masala at the very end also. It is aromatic and the cooking process dimms that part of it down slightly.

I'm low carbing so no longer eat rice. Makes curry very wet if you have it alone.
The answer is.............. cauliflower rice. Grate a cauliflower (1/4 is a portion) and fry in butter until tender. Delicious. I virtually live on indian food now!

Samber is nice - not sweet, and full of lentils. Alternatively, can you not just leave him be? If he doesn't like it, he doesn't like it!
