Curry in a hurry

Save money on takeaways when you are in the mood for a curry and nothing else will do! I spent years trying to make homemade curries which were never that nice....until this one.....Tastes fab and is so quick: (is cheap too!)

Fry an onion in a big saucepan. Add a clove of garlic. Add a couple of tablespoons of pataks curry paste (I used madras) Fry for a minute longer. Add a largish tin of cooked potatoes (24p Lidl) (or pre-boiled ones if you aren't as lazy as me). Add a tin of coconut milk (79p Lidl)...and some other veg if you have them (I used some green beans, but spinach would be nice if you put it in five mins before the end). Bring to the boil and simmer for 15-20 mins. Serve with rice or naan bread.

This is a lovely creamy curry, which would serve 3-4 people....enjoy!

    i do a similar thing but just use tinned tomatoes and spices rather than the curry paste. i just shove in whatever veg / meat i have to hand. its different every time and is lovely!

    another tip i learned from a hare krishna friend is to add some fresh ginger at the beginning.

  • i got good one too...
    you need one large whole chicken
    handful of mushrooms sliced
    pot of petit pois
    2 large onions
    and chicken jalfrezi sauce.

    cook chicken and shread
    boil mushrooms, petit pois and sliced onions till soft , add it all together in the slow cooker for 40 minutes, put a serving in sandwiches bags and freeze.
    I do this and it makes 6 servings.
    So when you want a quick tea defrost curry in th microwave and while doing that cook the rice.
    There you have a nice chicken curry tea in 15-20 minutes

    I did this one for tea last night

    Fry diced chicken until browned with mushrooms and cubed sweet potato and clove of garlic. Add 1tbsp curry paste, 200ml coconut milk and 50ml water. Cover, boil and simmer for 10 minutes.
    ...it is not of more importance than daily life, which I have an enduring wish to make as useful and beautiful as possible.

    I have found that generally the more fat/oil there is in a curry the tastier or more authentic tasting it is.

    Thanks for this - just making it now and it's so quick and easy and tastes delicious.

    The only potatoes I have are in the organic box, and they do tend to dissolve in the water - so I have used carrots, parsnips, courgettes and cauli.
