How much cheese is in your cauliflower cheese recipe?

Hi there:D,
I'm trying to frugalise a cauliflower cheese recipe for 4 people.
It will also have mustard in the sauce, and will be used to flavour a 907g bag of frozen cauliflower.
Recipes on the internet vary widely, BBC good food reckons you can get away with 50g cheddar, whereas James Martin has a staggering 250g in his, both of which recipes serve 4:eek::D
I was hoping a few different Old stylers who cook this on a regular basis would chip in with their idea of how much mature/extra mature cheddar you could get away with whilst making it still a cheesy enough sauce. Thanks in advance!
There are these threads below, but only one person lists their quantity of cheese (75g for 4 serves), so I'd love some more thoughts

Going for the mature certainly lets you use less, I don't measure it's just trial and error depending on the cheese. Sainsburys currently have McLelland seriously strong cheddar on offer 2 @ 400g for £4, (equals £5/kilo which is cheaper than their basics stuff), had some earlier today and it really is a strong one.0

thanks. Sorry I forgot to say, it will be made with Asda mature white cheddar, if that helps anyone advise on quantities

FWIW, I would go with 100g of cheese, 50g in the sauce with the mustard and 50g sprinkled on top (mixed with breadcrumbs, perhaps?) to make a crunchy cheesy topping.
Think I use more than this really, probably 200g but frugalised I think that that would be fine.

Just tried one with 80g cheddar and I think it's just about passable but required a fair whack of mustard. I'm thinking of a sauce poured over the cauli at the end rather than a baked one with a breadcrumby topping (although that does sound lovely) else I think it might be a bit too similar to the look and taste of the chick pea crumble....:D

James Martin likes to make coronary blocking versions of recipes. I would not be suprised if he had a block of butter in there as well.0

hi,
for both cauli cheese and macaroni cheese i used both cheddar and parmasan, i think (?) that the parmasan is stonger tasting so i can add a bit and up the tastiness.. never tested it out though.
also, i would always do the baked/grilled bit with half of the quantity of cheese on top at the end, then it really tastes of cheese even if not much in the sauce.

a bayleaf, a bit of raw onion and a couple of peppercorns (all of these, or whatever you've got in the house) infused in hot milk before you use it to make the sauce will also add a great savoury flavour and help lessen the cheese need.0

I'm with poppy, you can get away with less cheddar if you add a little parmesan xI will save my tesco £1 savings stamps this year! .......so far = £50 (full card#1)
Card #2 £6. I will not be skint at Chistmas this year!

thank you, sorry again, I should have been clearer:o, we can only afford these ingredients to be in the sauce: cheese, oil, water, flour, mustard. So it's more about how little cheese can we get away with under those circs

I don't measure the cheese but I use mature and a little parmesan to strengthen the flavour - so my sauce is a basic white with a couple of handfuls of grated mature a little bit of grated parmesan and ½ tsp mustard then I sprinkle just enough grated cheese on to cover the top.Blessed are the cracked for they are the ones that let in the light
