vegan camping one pot ideas for 2 please!

Hi
we are off at the weekend, and would like some really tasty vegan recipes enough for 2 people, that we can cook in one saucepan!
We enjoy nice wholesome meals.
Being a huge slow cooker fan, i dont tend to do one pots on the cooker!
hope someone may be able to help!

Curry curry curry!!
-Fry chopped onion and garlic until soft
-add two tbspns Mrs Pataks madras paste (and extra dried chilli flakes if desired)
-add veggies of choice (broccoli, carrots, mushrooms, beans, lentils- although requires soaking)
-add a tin of tomatoes
-allow to simmer until veggies are cooked
-add coconut cream if desired
(If rice you will obviously need another pan)

Hi frugalmumof4,
I would guess that most of your slow cooker meals could be easily adapted to cooking in a saucepan as they won't necessarily need long slow cooking like meat would to tenderise it. Also could you make a meal at home in your slow cooker and freeze it to keep it cool and once it's defrosted just reheat it in the pan?
There are some one pot recipes that might help in this link taken from the Going vegan......old style?! thread.

Curry served with naan bread instead of rice or a biryani type, where the rice is mixed in
Chilli served in taco shells

Pasta (shapes not spaghetti)
Chop an onion and some garlic if you like, lightly fry in a little oil. Add pasta & about a pint of boiling stock (made with stock powder & water), add peas or anything else you fancy, boil for about 10 mins.0 -

Hi frugalmum we like savoury rice - we take a bag of rice with peppers/herbs/mushrooms/cooked beans in it and cook up the lot! makes a huge and filling panful. Bean chilli is also a fav with lots of bread. We also like falafel cooked and then put a tin of baked beans and curry power in the pan and heat through

Cous cous would be easier to serve with curry than rice. You just need to sit it in some boiled water.0
