Top British chocolatier Bendicks has introduced a range of chocolate bars it hopes will be the best tasting dark and milk chocolate on the UK market.
So we have had Bendicks Bittermints and Bendicks Mingles - but what about chocolate bars?
The busy team at Bendicks have produced both a dark and white chocolate bar which they hope will go down well with the British public.
The dark chocolate bar
Many chocolatiers regard high cocoa solids as the mark of premium quality. But if the cocoa solids percentage is too high, chocolate can become unpleasantly sharp rather than pleasingly intense. The Bendicks quest was to develop a high cocoa solids chocolate without the unpleasant sharp notes. Its recipe has 72% cocoa solids, higher than most other premium chocolates, but more important than percentages is its choice of cocoa bean, and the way in which they process it.
Bendicks has selected beans with a full but rounded flavour, and developed its own processing technique. The details must remain secret, but they involve an optimised approach to roasting, and longer "conching" periods. Conching is the process by which chocolate is refined. It leads to a smoother texture, and drives off the sharper volatile flavours that can be trapped in chocolate.
Milk chocolate
Here the task was equally difficult. High cocoa solids can improve flavour, but too high cocoa solids mean having to cut back on the percentage of dairy ingredients, which give milk chocolate its creamy indulgence. The Bendicks solution was to opt for 36% cocoa solids, higher than most competitive brands but once again to use a blend of specially selected beans, and a particularly creamy milk, to give a rich, full-flavoured but mellow chocolate. If you are a dark chocolate aficionado it may not be for you, but for those who love creamy milk chocolate, Bendicks regard its new recipe as the best in the world.
