Help! Making Cake In New Mixer.

I have just got a new KitchenAid mixer. I cannot seem to make a cake without it turning out a complete mess. I've done 2 now and I seem to take ages with the beating, especially the sugar and butter.
Brownies I made came out very greasy and took ages to combine.
I've just tried to make a plain Victoria sponge, seemed to take ages to cream and now its cooked its all uneven, it even started to spill over the edge as it cooked. Again it tastes really greasy.
I'm useing the same recipe I used with a hand blender.
Please tell me how I should be making a cake in my mixer????

I have a Kenwood Chef, which is the same kind of thing so perhaps I can offer a few tips?
Are you using the whisk or the beater - for most cakes I use the K beater rather than a whisk.
Is the motor speed you're mixing at similar to your hand mixer speed? There should be no need to change the recipe to suit a mixer, but it might be worth checking any recipes that came with the mixer just to see how they work.
Good luck, and hope you get it sorted!0 -
I have a kitchenaid
I use the beater that is not the dough hook and not the whisk.
I have it only on setting one while i am mixing.
I have had many a sucess with that and i use a normal sponge recipe0 -
I have a Kitchenaid mixer. Cream the sugar and the butter using the paddle blade until creamy and as close to white as you can get it. I cream at a very high speed (8 or 10). Regarding spilling over the side, it may be that your new mixer is too efficient, and is incorporating more air than you're used to. Make sure you're using your paddle blade, not the wire whisk, and slow the speed down. As for the greasy taste - I have no idea.

P.S. When you say ages - how long? I normally run the machine for around 3 minutes, but it depends on how impatient I am.0 -
OK - I used the whisk, so will try with the K beater see if that helps. I was creaming the butter and sugar for well over 5 mins on a fast setting I still did not seem to get it as fluffy as I do with a hand mixer.
It seems to splatter it round the edge then it does not get touched again, so I had to keep stopping the machine to use a spatula to get it off of the edges.
Thank you for your replies, I will try again soon.0
