    Hi ashlea,

For the waffles, this thread may help:

    Waffles???

The thicker pancakes you describe sound like Scotch Pancakes so that thread might help.

  • I don't know if its a proper recipe, but to make american pancakes I just switch to self-raising flour, and if i don't have time to rest the batter, add 1/2 a teaspoon of baking powder

Add less milk too. It should be the consistency of runny honey.

I don't measure, so its hard. I'll give you my guestimates:

Just under 1/4 fill a small mixing bowl with SF flour. Add 3 eggs and 1/2 a pint of milk. Beat well. if its too thick add more milk, but slowly. Leave it for 20 mins before putting tablespoons of mixture in a hot frying pan.

PM me if that's horribly confusing
  • thanks pauliesgirl i am goin to give them a try in the mornin hope my oh likes em he better hehe ash x

I use 8 oz SR flour (the original recipe had plain flour plus baking powder), 1 egg and 12 fluid oz milk for American pancakes-that makes about 12 pancakes .

Mix the batter, put enough in a greased frying pan to make a pancake of about 3-4 inches across. I do 4 at once on a square griddle. Once bubbles appear on the top they should be ready to turn over.

Here is Nigella's recipe for american style pancakes, which I tried the weekend after we came back from a trip to New York, and can vouch is the real deal!

We do as she suggests and make up a larger quantity of the dry ingredients so can have pancakes any time we have a spare egg and a little milk (though I don't see why it wouldn't work to add powdered milk to the recipe then use water as the liquid when you come to make them.
