oats

ok, want to try to make meatloaf ala nigella.....states to use "quick cook oats"??

What are these? My cupboard only stocks porridge oats. Have also seen elsewhere "rolled oats" referred to??

Please oh founts of knowledge enlighten me as to what they are!

  • I think she might be referrring to instant oats (such as ready brek) but can't see why you couldn't use normal porridge oats (which are rolled oats anyway) - it shouldn't affect the flavour at all

    I would interpret this as standard porridge oats, which are sliced quite thinly to cook fairly quickly. Very posh (read expensive!) porridge oats are cut visibly thicker and are best soaked overnight or cooked for 20 minutes on the stove.

    I wanted to make this meatloaf at the weekend and bought some readybrek to do it with. Did you manage to find the 'A1 steak sauce'? I couldn't find it, but then I shopped in Adsa which doesn't have things like that anyway.

    You can sometimes find A1 sauce in Waitrose, but it depends on the area. I used to live near Cobham in Surrey and there are lots of Americans living round there, and the Waitroses in that area had tonnes of US stuff. There's also a farm shop in that area that sells US foods too. Sometimes posh department stores have it, or there are a couple of places online that sell US groceries, as well as ebay.

    Waitrose.. I might have known...I live in North East Wales...I'll get it off ebay/online. I hope my family like it !

    I used to live with an American girl who ate it on everything lol. As far as I could tell it was a sweeter, ever so slightly barbequey version of HP. Not quite so 'pickly' ...

    Nigella always puts at least one ingredient in her recipes that can be substituted with a cheaper, easier to find version. Use ordinary porridge oats -value ones from Tesco will be fine.

    I thought I'd have a go Nigella's mini meatloaves tomorrow. I shall use ordinary porridge oats and ketchup if I can't find A1 sauce in Waitrose. I think I'll make them in a muffin tin -cricket balls of meat mixture in greased muffin cups. We'll eat half hot with mash and veg and gravy and the others will be lunch box fodder.

    The meatloaves were very good. The kids said they were more like giant meatballs than mini meatloaves.

    I tinkered with the recipe a bit adding a small bag of my frozen veg base which added lots of flavour. I couldn't find A1 sauce of course so used ketchup instead. I may try it without the eggs next time as my dd who is allergic to neat egg was complaining of tummy ache and itchy eyes after eating them. Mind you she's a bit of a hypochondriac :rolleyes: -not sure they would hold together so well though.

    Here's my version of the mini meatloaf recipe.

    1 lb sausagemeat
    1 lb minced beef (any mince would work)
    ½ to 1 cup of finely chopped veg including onion, celery, garlic, carrot
    2 eggs, beaten
    3-4 oz porridge oats
    2½ tbsp ketchup
    2 tsp Worcester sauce
    salt and pepper

    Mix everything together well. Form into 12 cricket-ball sized balls or similar sized mini loaves. Place in greased muffin cups or on a greased baking tray and bake at 200c for about 30-40mins.

    I imagine it would be good baked as a large loaf too, but the baking time would need adjusting.
