Hi there
Hope this is ok here...only someone on another thread was asking for recipes using beans, pulses etc... I didnt want to hijack that thread.. but please feel free to move me if need be
I have the following recipes.... wont bore you all with all the recipes... will list the titles and then if anyone is interested in any i will put them on...saves me getting RSI too:rotfl:

I soak and boil a 500g pack of beans. I then freeze them in 100g portions. I use them in any recipe that calls for meat.
Tonight I am doing stuffed marrow - with beans.
I make a chicken casserole. Fry chicken portions till brown, remove and add lots of onion for 5 mins till clear, add lots of garlic then a tin of tomatoes and some stock, put back the chicken and the 100g cooked beans. simmer for 2 hours, adjust seasoning - to die for.0 -

I will start typing..... stay with me... it could be a while... i will do 1 recipe on a post... seems every time i do a long post i lose it :mad: .... when i have done this lot, let me know if you need any more.......
PARSNIP + SPLIT PEA SOUP - 4
250g split yellow peas - rinse well put in saucepan, cover with water. Bring to the boil and boil for 3 mins...skimming off foam....drain
Heat 1tbs olive oil in a large saucepan over a medium heat, add 1 onion, 1 small leek and 3 cloves garlic-all finely chopped - cook for about 3 mins, stirring frequently until just soft
Add 2 sliced parsnips (about 8oz) and continue cooking for 2 mins
Add the cooked peas, 3 1/2pt water, 1/4tsp dried sage, 1/8tsp dried thyme, 1/4tsp ground coriander and 1 bay leaf - bring almost to the boil, reduce the heat , cover and cook gently for about 40 mins until vegetables are very soft...remove bay leaf
Allow to cool slightly then liquidise..
return soup to the pan season well with salt, pepper and nutmeg to taste
VEGETABLE SOUP WITH GREEN LENTILS -6
Heat 1tbs olive oil in a large saucepan, over a medium heat, add -1 onion and 1 garlic clove -finely chopped and 1 carrot, thinly sliced and cook for 3-4 mins, stirring frequently until onins start to soften.
Add 450g young green cabbbage, shredded and cook for a further 2 mins
Add 400g tin of chopped tomatoes, 1/2tsp dried thyme, 1 bay leaf and 1.5 lt chicken or veg stock..bring to the boil and then reduce the heat and cook partially covered for about 45 mins until vegetables are tender.
Meanwhile, put 200g puy lentils into another saucepan with 1 bay leaf and 450ml water. Bring to the boil, reduce the heat and simmer for 25 mins until tender - drain off any remaining water, and set aside
When the vegetable soup is cooked, allow to cool and blitz, return to the pan and add the coked lentils. Taste and adjust the seasoning an cook for about 10 mins to heat through.

ADUKI BEAN + RICE BURGERS - 4
Heat 1tbs sunflower oil in a saucepan and gently cook 1 medium onion (finely chopped) for 10 mins until soft.
Add 1 crushed garlic clove and 1tsp curry paste and cook for a few more seconds.
Stir in 225g basmati rice and 400g can Aduki beans.
Pour in 225ml vegetable stock, bring to the boil and simmer for 12 mins, or until all the stock has been absorbed - do not lift the lid for the first 10 mins, leave pan to one side.
Lightly mash 125g firm tofu, add to the rice mixture with 1tsp garam masala, 2tbsp fresh chopped corriander(optional) and seasoning. Mix well
Divide the mixture into 8 and shape into burgers..chill for 30 mins
Heat 1 1/2tbs in a large frying pan, fry the burgers, in batches if necessary for 4-5 mins on each side and serve in baps with salad....and carrot raita :-
mix 2 large grated carrots, 1/2 cucumber cut into tiny dice into 150 ml greek yogurt-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
Mixed Bean And Aubergine Tagine With Mint Yogurt - 4
115g red kidney beans
115g black-eyed beans or cannellini beans....soak these over night in cold water and then cook seperately (???) in unsalted boiling water for 10 mins..then drain.
Place 600ml/1pt water in a tagine or large casserole, and add the beans, 2 bay leafs, 2 celery sticks -cut into matchsticks, cover and place in an unheated oven.
Set the oven to 190/375/gas 5 and cook for 1-1 1/2hr or until the beans are tender, then drain
Heat 4tbsp olive oil in a large frying pan or cast iron tagine base. cut 1 aubergine (about 12oz) into chunks and pat dry..add to the oil and cook, stirring for 4-5 mins. Remove and set aside.
Add 1tbs olive oil to the pan, then add - 1 onion thinly sliced and cook for 4-5 mins, stirring -until softened.
Add 3 cloves crushed garlic and 1-2 fresh chillies (seeded and chopped) - cook for a further 5 mins, stirring until onion is golden and has softened.
Reset the oven to 160/325/gas 3 ...add 2tsp tomato puree and 1 tsp paprika and cook 1-2 mins
Add 2 roughly chopped tomatoes, the aubergine, beans and 300ml vegetable stock, then season to taste.
If using -transfer to tagine or large casserole, cover and place in oven for 1hr.
Meanwhile , mix - 150ml natural yogurt, 2tbs chopped mint and 2 chopped spring onions..
Just before serving the tagine add 1tbs each - chopped mint, parsley, coriander
serve with the mint yogurt and couscous or brown rice

LENTIL SOUP 6-8
rinse 275g brown-green lentils (preferably the small variety), drain them and put them in a large pan with cold water to cover
Bring the water to the boil and boil for 3-4mins. Strain, discarding the liquid, and set lentils aside.
wipe the pan clean and add 150ml extra virgin olive oil.
Place it over a medium heat until hot and then add 1 thinly sliced onion and saute until translucent
Stir in 2 cloves garlic (sliced into thin matchsticks), then, as soon as it becomes aromatic, return the lentils to the pan
Add 1 carrot (sliced into thin rounds), 400g can chopped tomatoes, 1tbs tomato puree and 1/2tsp dried oregano.
Stir in 1lt hot water and a little ground black pepper
bring the soup to the boil, then lower the heat, cover the pan and cook gently for 20-30 mins, until the lentils feel soft but have not started to disintegrate.

I have loads of red lentils - bought to make baby food but LO wasn't keen!! They have been in a sealed container for 5 months ish - will they be ok to use?? Can I use them instead of any of the pulses in these recipes??
