I'm looking for the christmas pudding ice cream recipe featured in the Tesco magazine last Nov I think- it used luxury fruit mix and ready made custard, plus other ingredients. I made it last year and it was lovely- but I lost the recipe. Can anyone help me. thanks:xmastree:

Hi cafcfac
I made this last year too and thought it was soo easy and a delicious alternative.
225g Dried Mixed Luxury Fruit
2 Tbsp Brandy
50g Caster Sugar
2 Tbsp Liquid Glucose
1 Tsp Mixed Spice
1 Tsp Cinnamon
1 x 500ml Tub Ready Made Fresh Custard
300ml Double Cream
Put the dried fruit in a bowl. Soak in the brandy and set aside. Place a freezable container in the freezer. In a pan gently heat 75ml water with the sugar and glucose until the sugar dissolves. Increase the heat and bring to the boil. Add the spices and remove from the hear. Stir to blend together and allow to cool.
Meanwhile, in a large bowl mix together the custard and cream. Add the sugar syrup, fruit and brandy. Stir till combined.
Remove the container from the freezer, pour in the ice cream mixture, return to the freezer and leave for 6 hours. Take out of freezer, whisk with a fork to ensure fruit is evenly distributed and refreeze for another 6 hours. Remove from the freezer 15 minutes before you serve.
Hope you enjoy! Fit Likeee!:j0 -
