I've just found this thread from the post of the month nomination thread and am inspired! Thank you so much Gingham Ribbon
I was veggie for 9 years but started eating meat when pregnant with my eldest (now 8) and slowly have drifted into a meat-virtually-every-day type eating person. I've been wanting to try and reduce our meat consumption but couldn't for the life of me remember what I used to cook when i was veggie! I've read your planner and now have loads of ideas, all of which sound better than the dodgy meals I used to cook :rolleyes:
I think we'll start with the sausage casserole seeing how I'v got some of those in the freezer0 -
Well some of these dishes I am going to have to do - they sound lovely. Must admit that we do eat a fair bit of meat, but when we go out I do like the odd Veggie meal . I did have a "Nut Roast" one evening and was wondering if anyone has ever made one? GR this is a great post for ideas. Have cooked pulses etc but have allways added them to meat dishes. Will let you know how we get on this week.0

Can I ask how you make vegetable hotpot ? thanks as I too liked the vegetable & sausage casserole and adapted it for the slow cooker.0

Okay, I don't know if I'll get the ingredients in time to make this today or tomorrow but I'm going to try a hot pot and dumplings in the slow cooker. I've got 3 recipes for the hotpot (obviously they can be adapted to suit the veg you have and your taste.) One is more of a winter warmer which is what I'm going to make and get back to you on. The third one has the dumpling recipe, which can be used with any of them. Here you go:

I picked up a slow cooker for £6.99 the other day and I love it. The sausage cassarole was really juicy and tender in it. That's all I've tried so far. I'll get back to you on the hotpot.

I made your 3 Bean Chilli last night and it was lovely.
It turned out to be a very economical meal.I got all the fresh veg at half price in Lidl's and I also bought the tinned beans and passata in there as well.It made a huge quantity so I served one portion with rice and a bit of creme fraiche on top and then froze the rest in individual portions for future meals.

Since it's pumpkin season, I tried the butternut squash soup with pumpkin instead. I really liked it. I didn't have any fresh coriander but I think that would go really nicely with it.May all your dots fall silently to the ground.0

Thanks Gingham R for this thread, and all the work you have put into it. Some great recipes.
Been a veggie for even longer than you - but then, I'm older :rolleyes: . Had got into a bit of a rut myself, so going to have a bash at some of your recipes when Mr AM goes back to sea next week.
I know you like your brown sauce, but I am going to substitute mushroom ketchup in it's place, as that is what I have - and it's the nearest I can get to veggie Worcestershire sauce. Am sure it will be okay, since I tend to splash it about in a lot of recipes.
Glad to see you including broth mix in your recipes, both cheap and nutritious, wouldn't be without it, and like you, I make my soup so thick that you could "dance" on it, nothing so good, tasty and warming on a cold day, with HM bread and butter - scrummy.
Another wee tip for anyone wanting to do the dumplings, and can't get their hands on vegetable suet - just use butter or your vegetable spread in it's place. Works out just fine.
For Lizzie12 regarding nut roast..............
Not something I do very often, actually been a very long time, so might try one again one of these days - anyway, for leftover bits, I used to mix with mayonnaise, maybe add some chopped tomato and cucumber and use as a sandwich filling, or as a topping on toast.
