Cake with 3 eggs?

:hello:

I've had a few  watching the rugby (say nowt  ), and I was going to make a chocolate yoghurt cake. I cracked 3 very old eggs to see if they were dead yet, and then realised I haven't got any yoghurt (well, only strawberry :o ) and I'm much too drunk to drive to the shops.

Can someone give me a cake recipe with 3 (or 4, or 5) eggs in please, so they don't get wasted? I haven't got much in, so something simple would be best.

Ta very much. :D

MBE

Edit: Scottish recipes not welcome, if it's all the same to you.

Extra edit: I've got no butter either, only oil. :o
If you lend someone a tenner and never see them again, it was probably worth it.

OOoo another one for the index. :D

You can make any cake with three eggs.

Just weigh the eggs and add equal amounts of sugar, SR flour and butter for a victoria sponge.

    2 cartons caster sugar (i use 1 & 1/2 only)
    2 cartons of s.r flour
5 oz melted marg (or use veg oil)
    2 eggs beaten

melt marg or put oil in a bowl, add rest of ingredients and mix
put in 2 x 1lb loaf tins - i use one big loaf tin - greased and lined
cook 180/190 degrees c for approx 40 mins

Victoria sponge. Weigh the eggs (I used 3 earlier, and it was 200g) then add the same quantity of:
    Self Raising Flour
    Caster sugar (Granulated will do)
    Margarine/Butter

add a tiny bit of baking powder.

add some vanilla essence if you're feeling posh and have got some.
Alternatively, leave out a little bit of flour and add some cocoa powder for choc cake.

Beat it all up in a bowl and bake at 180 for 15-20 mins.

Turned mine into a lemon curd sponge earlier.

I've always done 3 eggs & 6 oz each of SR flour, butter/marg & sugar. Or 2 eggs & 4 of each. Or 4 eggs & 8 of each. You get the idea... lol!

In fact I've just had the 3 egg quantity one with a tin of peaches underneath - eaten hot with evaporated milk :) Yummy peach upside down cake....

Have you got flour and caster sugar? You can make a whisked sponge with 3 eggs, 3 ounces plain flour and 3 ounces caster sugar... let me know if you need a recipe...!
If you do what you've always done, you'll get what you've always got.
