Gluten and Dairy Free Waffle Recipe Ideas 30th Dec 07 at 4:30 PM
    Hi

After being inspired by reading this board I've bought a doughnut maker and waffle maker to makes cakes for my daughter (who is autistic and on the gf/cf diet) instead of paying between 1.50 and 2 for 4 little cakes!! which she will eat in one sitting!!

Unfortunately I can't find a easy recipe for the waffles - can i substitute GF plain flour for the ordinary flour or do I need to add anything?

    Thanks

    Plain Waffles

    6oz gf flour
    2 tspns gf baking powder
    1/2 tspn salt
    2 tspns sugar
    2 eggs separated
8 fl oz soy milk (rice milk or darifree works just as well)
    3 oz melted Pure marg

Chuck flour,b.powder, sugar and salt into bowl.Put egg yolks, soymilk and melted butter into another bowl.Add dry stuff to wet stuff and stir lightly to combine.
Whisk eggwhites til stiff then fold into other ingredients.
I have a petra single round wafflemaker and use 3 tablespoons of the mix to fill mine but just check with your manual how much to put in yours

    Potato Waffles

    6 oz mashed potatoes
    2 fl oz warmed soymilk
    6 tspns gf flour
    1 oz melted Pure marg
    salt and pepper
    2 eggs beaten

Beat potatoes with milk, flour and melted Pure until smooth.Add salt and pepper and beaten eggs, mix together and dollop 3 tablespoons into preheated wafflemaker.

Well done on trying out the diet I know from experience how expensive it can be do you have access to anything on prescription?? I had to persevere to get my GP to refer me to a dietician first before he would let us have them but we finally got it sorted out.Best of luck any probs feel free to ask and I'll help if I can *if I don't know I can always dig out my pile of books lol*

    Chocolate Waffles

    6oz gf flour
    2 tspns gf baking powder
    1/2 tspn salt
    1 oz sugar
    2 oz dfree choccie
    2 eggs seperated
    8 fl oz soymilk
    3 oz melted pure

Put flour,b.powder, sugar and salt into one bowl.Melt choccie *I normally zap mine on 30% in the microwave*.Put egg yolks, milk, melted Pure and choccie into bowl.Add wet to dry ingredients and mix well.
Whisk eggwhites til stiff and fold in to other ingredients.

Tillysmum I usually batchcook these and freeze them then just get a couple out of the freezer as needed and pop them in the toaster It helps make up a bit for the faff of making them HTH Dee

Thanks for the recipes - going to try it out now!

I get bread, pasta and plain biscuits on prescription - the doctor was so impressed with the change in dd - we actually got in to see the doctor without screaming the place down!

The diet has made a huge difference to her behaviour (though still non-verbal) she is much calmer. When she has even a trace of something she shouldn't she is like a child possessed for up to a week!

I so know the feeling when we have infringements We do get the 'glowing red ear' as a warning sign though so at least we get to batten down the hatches
Well done getting the 'scripts, our GP was very sceptical and he still doesn't have a clue what I waffle on about but at least he's listening to us now!
It's so good to hear other people are having positive effects with the diet

I also use EyeQ for DS3 this can be sneaked in to anything that calls for oil helps keep him calm (its only a fishoil supplement)
I found it was withdrawing the Casein that affected his speech more so than the Gluten, with him the Gluten causes more spacing out, stimming etc..it's only taken us 3 years to work this all out
