Smoked haddock with crème fraiche and chive sauce, served with mini-roasties and samphire.

The haddock is dead easy - poach in a shallow frying pan in milk. Pour enough milk over to come about 2/3 the way up the fish. Simmer in the milk for a few minutes then carefully flip the fish over and cook the other side for a few minutes. Take the fish out the pan, stir in a carton of crème fraiche and simmer for 5 mins or so to thicken. Stir in a knob of butter until it melts, put the fish back in the pan for another minute and sprinkle over some chopped chives.

Chicken fricassee, was going to be with saut! potatoes and veg, however can not be arzed now, so it will be coming with a jacket spud instead.
Yep...still at it, working out how to retire early........ Going to have to rethink that scenario as have been screwed over by the company. A work in progress.

Today hasn't been good for me ... had a couple of bags of crispy things and tonight had some dahl from Iceland and chips from the local chippy. Now being washed down with copious amounts of fizzy water ...
